    these bar cookies are great. however, as paula says, they are sooooo sweet. i made this, and i added more coconut. it also keeps very well in fridge for a week. i noticed that the longer they sit, the better they are. so now i make them 1 day in advance, and they are better.

    So simple to do. Add 2 T of cocoa to make chocolate flavored cookies and add some cocoa to topping as well.

    I MADE THESE FOR OUR CHURCH BRUNCH LAST SUNDAY. THEY WERE GONE IN A FLASH! I CUT THEM IN 1 X 3 INCH PIECES SO THEY WOULD GO FARTHER. I WOULD RECOMMEND THIS TO ANYONE WHO WOULD LIKE TO FIX A QUICK DESSERT FOR A CROWD. I SPRINKLED A SMALL AMOUNT OF COCONUT, NUTS, AND GRAHAM CRACKER CRUMBS ATOP FOR MORE EYE APPEAL. P.S. BE SURE TO REFRIGERATE LONG ENOUGH FOR THE FLAVORS TO MELD.

    These would be better if you omit the entire filling and just frost graham crackers with buttercreme frosting like my grandma made for us. The filling is far too sweet and isn't as good as the tasty ingredients that go into it. These looked delicious so I had to try them but I was disappointed.
