I am not a big macaroni salad fan and I hate onions and peppers. However I am married to a southerner so I HAVE to make things like macaroni salad, which I have always turned my nose up at. After trying this recipe, I am a convert! I chop the veggies up extra fine so I don't crunch into a nasty old onion or pepper and all I get is the good flavor of the veggies. I also added finely chopped bacon and a handful of Parmesan cheese for added flavor. You made me a believer Miss Paula, bless your heart!

Never in a million years did I think I would find a better mac salad recipe than my Mama's-I'm taking a salad to my kids school pootluck and wished I had my Mama's recipe, I searched FoodNetwork and came to the closest to what I could remember that she used to make-Paula's yours is even better!! Thank you and I love you and show!!

This is my new fav macaroni salad. I added just a pinch of hatch green chili, it gave it a punch. Love it and make it all the time now. Thanks Paula!

My kids aren't big fans of macaroni salads that we buy at the store but they absolutely loved this recipe. Perfect blend of crunchiness and creaminess with great flavor. I substituted spicy brown mustard instead of regular yellow mustard for some added kick. I also added some cooked bacon bits which turned out quite well. Thanks Paula!!

My husband does not like pasta but this is one salad he will eat. (he likes anything Paula has I added pickle (dill and red onions. FAB!!!!!!!

My sister said it was the best macaroni salad she ever ate. We are foodies, as well. Only thing I omitted were the pimentos. Otherwise for me, just perfect with a great balance of CREAMY and CRUNCHY. Was tasty. Perfect for a BBQ or summer holiday.

This is classic macaroni salad that is so wonderful. It is great with barbecue or anything from the grill. I use half fat free greek yogurt and half mayo to lighten things up a little. You may not need all the dressing- just depends on how coated you like this. It is good for a few days after it's made too.
