Total Time:

12 servings

  • 1 can refried beans
  • 1 large bag white corn tortilla chips
  • 1 medium onion, chopped
  • 1 cup shredded pepper jack
  • 1 jalapeno, sliced crosswise, plus extra for garnish
  • 1 can chili, or your favorite chili recipe
  • 1 cup shredded Cheddar
  • 1 cup sour cream
  • 1 cup green onion, chopped
  • 1 tomato, diced

Have all the prepped ingredients easily accessible to assemble nachos.

Preheat the oven to 350 degrees F.

In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

Thanks, Paula for the great nacho recipe! You always give me the inspiration to branch out
and make a recipe my own. Can't wait to see your new book in October. Be of good cheer.
    Easy and yummy too
Delicious! Our guests and family devoured the entire pan of these great nachos. I substituted salsa for chili. Great for entertaining.
Pretty good and easy to assemble. Just had to leave out jalepenos for my family!! =
Hi everyone, I've made these nachos many times since paula introduced them a couple of years ago. I've always thought of writing a review, but never made an effort to do it. well here it goes.As a latina,I've made many nacho recipes.I entertain lots. And let me tell you,Ms. Paula Deans are the bomb! she uses two types of beans that I never thought would taste good together, but they do!the part of the recipe that asks for refried beans,I use homemade beans that I make,or buy from small taco shops.they're delicious, and make the recipe even better! I don't like the can tasting refried beans, but the chili beans are fine.ok, there ya go I wrote a review for her outstanding nachos that I've been wanting to do for a long time.Adios!
I make these nachos every year during football season and they are always a huge hit! The only thing that I do differently is sometimes I do not add the jalapenos because some people do not like them (for some odd reason. These are definitely the best nachos ever!!!!!
everyone loved these will make again and can change it up!
DELICIOUS AND EASY!! Made it for a super bowl party! Everyone loved them!
    best nachos ever!
So easy to make and always gets many compliments.

    delicious recipe!!
Go Paula! My boys requested this for a football party and now want it for Christmas. Good snacking food.
Great tasting nachos. The only drawback is they have to be eaten right away. Not that great after 30 minutes...
wonderful, they taste like the ones i make at home except easier and healthier because i opted for the baked chips inseted of my own fried chips. i cant get enough of this tasty yet simple receipe. comes to show great food does not need to have a lot of ingredients or complicated to be great!
Made this last night as an appetizer. I used half of everything since i was only making it for 2 people and all the other reviews said it was alot of food. I am THE WORST cook. I could burn water, honestly. BUT my bf said they were so good they tasted like they should've been served at a restaurant. These nachos get 5 stars for boosting my ego :]
to the person who said " If you need Paula's guidance in building nachos, then you need to be watching How To Boil Water."...well, lol that was a little harsh, I mean you looked at the recipe ...Anyhow, I am a wonderful cook, but am always interested in looking at "different" ways and methods of cooking...These were very tasty...I chose to just make up a spicy ground beef instead of the chili, since I used the refried beans, but other than that..YUM! TY Paula, you are truly a genuine, nice, woman who is a joy to watch!!!
Great to eat, a lot of work to get to the point to eat them!!
It is just amazine all the cheesey ness is just a big fan of cheese as you see.
I loved this recipe and easy to make.
This was such a simple recipie, but it had a great taste coming straight from the oven. I added plenty of jalapenos and a little salsa too. My husband really enjoyed too!

    Thanks Food Network
the chili on the nachos make a big difference
I made these for hubby and I during the Super Bowl. We both went crazy on them! Macho Nachos, the name says it all!
I made these nacho for a party and they disappeared in a few short minutes. I guess I should have made more!! Very tasty!!!
    besttastingnachos ever!
We just got finished making this for our Super Bowl Party; they probably lasted about 10 minutes!! Absolutely easy to make. We will definitely serve these again.
This was a great and easy dish esp to use up leftover homemade chili.
