    Baked these for my daughter and son-in-law as a treat since they are on the South Beach diet. Cookies are passable, but nothing beats real sugar. The sugar substitute after taste is rather strong, though the peanut butter flavor and aroma is really good. Cookie texture is best described as "powdery", not really dry because they were nicely moist on the inside. But, I would imagine that is attributed to the texture of the sugar substitute. I used a 1 1/2T scoop (like an ice-cream scoop which I gave a light spray with vegetable spray for easy release. I also sprayed the fork before pressing the criss-cross design in the top. Baked nicely and held their shape well. Did not add the additional sprinkle of sugar substitute on top and glad that I didn't since the after-taste was so strong. But, all in all, if you are on a sugar restricted diet for any reason and like a cookie treat every once in a while, these would do the trick. Personally, I'd just rather do without the substitute and eat a spoonful of good old south Georgia peanut butter. Thanks for a go at a healthier treat, Paula. Didn't make it to the book signing in Albany, I hear it was a real success.

    My neighbor has cilica and can not eat any thing with Wheat Flour in it. I made these and she loved them. They were easy to make and great tasting.

    tried this recipe and cookies spread all over pan and were very hard and sweet. what could be the problem. am looking d=for recipes that use sugar replacement. thank you. Betty

    So i made these cookies and found them to taste horrible. The Splenda just burns an awful taste into your mouth. Sorry Paula Deen, other than that i love you.

    I used splenda for baking witch is half surger and half splenda. There was no after taste and came out wonderful.

    I used sugar instead of Splenda and while this healthier version of the peanut butter cookie is no match for the traditional version, I will make this again and again for times when you want to have tasty cookies with less guilt!
