Oh my God it was right on the money. The salsa is totally excellent which gives me ideas to use it on chicken as well. Totally easy and excellent..

Simple and easily, yet good enough to even impress your in-laws. Paula Dean does it again with a recipe that serves salmon sweet enough for anyone, but with a side of salsa packs enough kick to satisfy any old school man of iron stomach constitution whose ready to think salmon is a woman's dish. Try it and you won't regret it.

This was my first time cooking salmon and it was a big success. I have shared the recipe with family and the people I work with. If you need a tasty salmon recipe. This one is a winner.

The salmon and pineapple salsa were a very yummy combo. The salsa had just the right amount of sweetness and spice. I served it with another of Paul's recipes--corn casserole and that was delicious because the fish was light and the casserole a bit rich.

Loved this dish the first time I made it and have enjoyed it every time since. Tastes & presents like it took a lot more work than it did. Also worked well on chicken. I've made the salsa on its own, and it's great with chips.

With or without the salsa the salmon was great. The salsa is great though. It was just the two of us and we loved it so much it was a good thing there were not two others eating with us.

What a wonderful recipe! I didn't have any pineapple juice, so I just took a chunk of fresh pineapple & threw it in the food processor to liquefy, then added the rest of the ingredients to the food processor to make the marinade. I left the salmon overnight, and it really picked up the flavor of the marinade.
The salsa is also wonderful. I used fresh pineapple, and a small piece of fresh jalapeno pepper in place of the pickled ones. Since the salsa is cooked, I think I will use canned pineapple next time I make it. Thank you, Paula, for a great, and simple, recipe!

The salsa could use a little work. I recomend leaving out the tomatoes, and adding cilantro and another fruit such as mango.

I made just the salsa part of this receipe and served it over chicken and tuna steaks that were marinated in teryaki sauce. It turned out great. The only thing I did different from Paula's receipe was used orange pepper for more color, fresh jalepanos, and a few dashes of Tobasco.

I cooked my salmon on an indoor grill and it turned out great. The pineapple salsa was the perfect compliment - in fact it made the dish. I seeded my tomatoes before cooking -- that kept the salsa from being to soupy. This recipe would also work for chicken and pork.
