Wow was this good! It makes a lot and would be perfect for a potluck. I try to keep it in the fridge at all times now since we just eat it by the bowlful. Makes for nice snack without the guilt. Yay! You could also add salami and olives to make a meal.

Delicious. Made this the day before so flavors blended well..I also added broccoli and black olives. Very colorful and healthy. It made a great addition to our super bowl party.

This was really easy and very good! I brought it to a pot luck and my dish was the only one that was completely gone! It is very beautiful and tasty. I made the dressing a few days in advance to let the flavors mix. I made the salad the day before the event to let the salad marinate. It was a huge hit!!

This salad is amazingly delicious--just made it for a family get-together & everyone loved it. Next time I make it, I will decrease the oil & garlic. I love both, but #1 did not like the oily residue left on my lips-less oil will solve that issue. #2 too, too, too garlicky (and I love garlic=it was extremely biting when I first made the salad & after letting marinate overnight the bite was gone, but the garlic still overshadowed the other flavors. Even with the minor glitches, this is still a creative & tasty option for getting the vegetables on the table.

This is a wonderful basic marinade sauce. As far as veggies, you can throw in whatever sounds fun and tasty. I'm thinking fresh mushrooms, pepperoni, broccoli, summer squash. I think I overloaded with a little too much garlic and salt. It was a people pleaser.

Yum! I have started a sugar/flour free diet and was quickly growing sick of the same ol' salads. This was good and different too. I agree with others, that next time I would reduce the amount of olive oil. Instead of sugar, I added a tiny bit of agave nectar, though I didn't think that was necessary for this recipe. Someone mentioned olives, which would be a great addition to this colorful salad as well.

I love this recipe. I did cut the amount of olive oil in half and still think that may have been too much. Love the taste and the crunch. Forgot to put the sugar in and still thought it was good. Will definitely make it again! And definitely make the day before.

Great combination of vegetables and dressing; flavor improves greatly after sitting overnight. I added calamata olives which adds to the overall flavors of this salad. We made this during the winter and will certainly use this during the spring and summer.
