    DEEELICIOUS!!! I am always looking for things I can prepare ahead of time so I don't get stuck without something healthy to eat. This is perfect! So much crunch! Wonderful side dish!

    Everyone in my house absolutely loved this recipe! I replaced the 1/2 cup of olive oil with vegetable stock and just a touch of olive oil. I also replaced the sugar with Truvia, to make this a VERY healthy salad! The tastes melded well together and with 2 hours of marinating time, the vegetables tasted amazing. I strongly recommend this recipe to anyone looking for a healthy, filling salad, anytime of day or year!

    OK so I am not a huge Paula fan, just because I like to keep my cooking as healthy as possible, but I have to give that one to her! First I didn't even imagine that the raw vegetables would taste nearly as good as they did. The 2 hour marinade (minimum is definitely key. My boyfriend who hates cauliflower fell in love! The only change I made was half the olive oil and vinegar and added a bit more salt. What a lovely refreshing side to any dish! Thanks Paula! :0

    We love this recipe - I always add a little freshly grated parm cheese, and use green and black olives. Totally a "chick salad" and lasts all week!

    This was different than anything I have made before, but very yummy! I would suggest making it the night before you plan on serving it, as the dressing tastes much better after sitting longer. I will make this again for sure!

    This recipe was great! i marinated the veggies & then put them on skewers to make it a finger food! everyone loved it...including the vegan at the party! Thanks Paula!!

    Very good salad. I made an accompaning relish dish, without the dressing, for the children at our party. I also used the black olives as suggested in another review, which added to the eye appeal.
