Ingredients
  • 4 cups frozen hash browns
  • 1 (7.6-ounce) package butter and herb mashed potato mix
  • 1 stick butter, softened
  • 4 ounces cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups boiling water
  • 2 cups prepared French-fried onion rings
Directions

Preheat oven to 350 degrees F.

Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

I tweeked this recipe a little (use trio instant mashed and cheddar cheese and use it for groups from 10 - 250 people! Eveyone loves it and the leftovers are great. These potatoes were a big hit with my family! I made them exactly as specified in the recipe, using 1 small can of the onions which was just a little short of the 2 cups indicated. This makes a lot and we are looking forward to the leftovers to add to our dinner tonight. I really don't understand some of the comments about this tasting just like instant potatoes. I love potatoes and usually use the "real" thing and I really couldn't tell the difference. My husband said he even preferred these to the real thing. I've made this recipe several times and it is always a hit. So easy and good for leftovers, if there are any, Make mostly for holiday gatherings but it's good anytime. Sometimes it's hard to find the boxed packages with two envelopes for the butter and herb mxix as they have started packing in individual envelopes. New packaging has also become a problem when trying to find 10oz packages of frozen broccoli and spinach for other recipes. Sometimes you have to buy larger packages such as 16oz which is a pain when you only want 10oz. Boil your water and plop the frozen hash browns in? just be sure to cook for the five minutes. They should not be completely cooked. My butter & herb box mix had two pouches for two servings. I had opened both but caught it before I added both pouches. Even with that, my mix was more than a 2 quart casserole could hold so I used a 9 x 13 pan. This actually turned out great because it gave more surface to brown. Waiting to add the cooked hash browns to the mix last, I combined everything stirring well - adding the boiling water. This kept the hash browns from breaking up too much and made it fluffier when the casserole was dished out. I am from Idaho and now live in Connecticut. I have honestly eaten potatoes every way imaginable...including in donuts. However...this recipie is honestly the best version of a potato recipie that I have ever had the opportunity to eat! I could eat this for breakfast, lunch and dinner...then some more for dessert! The two cups of boiling liquid called for the in the recipe is actually the reserved liquid drained from cooking the hash brown potatoes: "Bring a pot of water to the boil and add the hash browns. How much of the boiled water do you use to mix in the recipe? My 6-year-old asks for mashed baked every week. The first time I made it following the recipe, I found it to be a little dry, so I use a bit more sour cream (about 1 cup) and a bit more cream cheese if I have extra on hand. Otherwise I would have given the recipe a 5-star rating. I really liked this recipe, but changed it with some of the suggestions listed in other reviews (fresh garlic, 3 cups of water, a little bit of dill). I was wondering if anybody tried a lighter version (fat free cream cheese and sour cream). I don't see why it wouldn't taste ok. I made the recipe for a family dinner and everybody liked it, but they might not be so willing to eat it if they knew how much fat was in it! I think it is really important to up the water to 3 cups instead of 2. Even with 3 cups of water, it was still really firm, I can't imagine how dry it would have been with only 2 cups of water. I made this last night and it was fabulously rich and good. I couldn't get myself to use boxed mashed potatos so I boiled 3 large potatos ( I halfed the recipe ) instead and whipped them, and eliminated the water from the recipe. (If you cut the potatos up into cubes before you boil them, it only takes 12-15mins for them to cook.) Also added prosciutto, green onions, and peas. I used the strip type hashbrowns from the dairy case that aren't frozen and left out the step where you put them in the boiling water. I have to say that I agree with others who thought they were a bit dry but it certainly didn't affect the taste and they were great! The potatoes are the best I have ever had. They melt in your mouth. My friend Karen made them for me and she made one change that makes them even better if you like a little spice.
