Mashed Baked

  • 4 cups frozen hash browns
  • 1 (7.6-ounce) package butter and herb mashed potato mix
  • 1 stick butter, softened
  • 4 ounces cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups boiling water
  • 2 cups prepared French-fried onion rings

Preheat oven to 350 degrees F.

Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

    My new favorite potato dish! My Husband and my Mother both loved it! Yummo!
    I tweeked this recipe a little (use trio instant mashed and cheddar cheese and use it for groups from 10 - 250 people! Eveyone loves it and the leftovers are great. You can even add additional milk and make a great soup from the leftovers. Or add leftover ham and have another great cassarole. Its a favorite for us.
    I fixed this last night for my extended family. I am the youngest of the family and take a lot of abuse about my cooking. The potatos were such a hit all I heard was great praise mixed with " I have to have this recipe". I served prime rib, your potatos, green beans, tossed salad, home made bread and pineapple bars for desert. Thanks for sharing such special recipes with us! Grandma always knows best.
    We make this every year now for Thanksgiving and some other family get togethers! It has become a tradition. Shopping for the ingredients today! Thanks Paula!
    All I can say is thank goodness this recipe didn't come with the nutritional information. Ignorance is bliss, right? These potatoes are amazing. I followed the recipe to a tee and they came out perfectly. Made them for the in-laws and got rave reviews.
    It is now a family tradition.

    I'm confused do I use both packages of the instant mash potatos or 1????

    THis was real good, but don't like to use boxed potatoes. Thought I'd try it anyway for a large group for Easter brunch. Next time I will use my own mashed potatoes.

    I love potatoes and this dish was a HIT!!!!! I wasn't too sure about baking mashed potatoes at first but so glad I made this!!!!
    These potatoes were a big hit with my family! I made them exactly as specified in the recipe, using 1 small can of the onions which was just a little short of the 2 cups indicated. This makes a lot and we are looking forward to the leftovers to add to our dinner tonight. I really don't understand some of the comments about this tasting just like instant potatoes. I love potatoes and usually use the "real" thing and I really couldn't tell the difference. My husband said he even preferred these to the real thing. So to all you food snobs out there, there's nothing wrong with taking a little help occasionally.
    I thought I followed the recipe exactly. Maybe it was just me & my husband, but we were disappointed in the final result. Paul Deen is one of my favorite chefs but this was not one of her best. I'll not make it again.
    This is a family favorite. I have made it three times now and it is always a huge success.
    I have all of Paula Deens cookbooks and am never
    disappointed with anything that I make. I always get
    requests for items to bring to a party that come from
    the cookbook. I make lots of Paula's pumpking bread,
    broccoli salad and the mashed potatoe bake gets the
    most requests.

    Paula you and Michael are so cute and I love your
    recipes as much as I love your accent. I can never
    get enough of watching your show on the cooking
    channel. By the way - you are a big fan with my
    boyfried because he loves butter as much as you do
    and he loves everything I fix from your cookbook,

    What an amazing recipe. It tastes excellent. And the best thing is you can make it ahead of time and put it in the oven when the roast is done. Who could ask for anythng more?
    LOVED IT!! Was a little worried to make something called "mashed baked" but it was a hit!! In fact everything that I have made courtesy of Paula Deen has been a hit! I could never go wrong making one of her recipes!!
    do i use both packages of the buttter herbs
    I made this for the first time last night and it was wonderful!!! The whole family loved it. The only thing I did different was added some cheese on the top and then the french fried onions. I will definately make this again.
    Could not wait to try. No matter how many different cheeses, sour cream, and spices you add, this still tastes like boxed mashed potatoes. Discarded.
    I've made this recipe several times and it is always a hit. So easy and good for leftovers, if there are any,
    Make mostly for holiday gatherings but it's good anytime. Sometimes it's hard to find the boxed packages with two envelopes for the butter and herb mxix as they have started packing in individual envelopes. New packaging has also become a problem when trying to find 10oz packages of frozen broccoli and spinach for other recipes. Sometimes you have to buy larger packages such as 16oz which is a pain when you only want 10oz.

    Anyway, Paula, we love you and Michael, even though you use too much sugar in some of your recipes.
    Boil your water and plop the frozen hash browns in? just be sure to cook for the five minutes. They should not be completely cooked. My butter & herb box mix had two pouches for two servings. I had opened both but caught it before I added both pouches. Even with that, my mix was more than a 2 quart casserole could hold so I used a 9 x 13 pan. This actually turned out great because it gave more surface to brown. Waiting to add the cooked hash browns to the mix last, I combined everything stirring well - adding the boiling water. This kept the hash browns from breaking up too much and made it fluffier when the casserole was dished out. As I made this a few hours ahead, then baked it closer to the time to be served - it had a chance to meld the flavors and left everyone asking for MORE!
    I am from Idaho and now live in Connecticut. I have honestly eaten potatoes every way imaginable...including in donuts. However...this recipie is honestly the best version of a potato recipie that I have ever had the opportunity to eat! I could eat this for breakfast, lunch and dinner...then some more for dessert! They are wonderful! I followed the instructions exactly...and reserved 2 cups of the water that I boiled the hash browns in to add to the mixture. It couldn't have turned out more perfectly! I've never gone wrong trying out Paula's recipies but this one was truly a treasure!
    The two cups of boiling liquid called for the in the recipe is actually the reserved liquid drained from cooking the hash brown potatoes: "Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain." Thank goodness for reruns! Hope this helps.

    We LOVE this recipe and make it for the holidays, but thats about it. With the amount of butter and other not so healthy additions, it is absolutely a TREAT.

    I fixed these mashed baked potatoes for Thanksgiving. My husband and I agreed - they were the best mashed potatoes we've ever eaten!!! TRY THEM!!
    Was a bit confused about amount of water to add. The potato box has two pouches and recommends 2 cups of liquid for each pouch. So do I put both pouches in with only 2 cups of water or just one?
    How much of the boiled water do you use to mix in the recipe? I was surprised to see that since she first mentions draining the hash browns, but doesn't mention to save the water to use later in the recipe.

    This recipe looks really good and I'm looking forward to making it.
