Ingredients

  • 8 tablespoons (1 stick) butter, divided
  • 1 cup sliced fresh mushrooms
  • 1/2 cup diced onion
  • 2 tablespoons chopped fresh chives
  • 1 clove garlic, chopped
  • 1 cup white wine
  • 6 cups (about 2 pounds) diced new potatoes
  • Salt and freshly ground black pepper
  • 1/2 cup sour cream
  • Small amount warmed whole milk

Directions

In a saucepan, melt 1/2 stick (4 tablespoons) butter and saute mushrooms, onion, chives and garlic. Add wine and simmer for about 15 minutes. In a pot, boil potatoes until done; drain. Mash potatoes and add remaining 1/2 stick butter, salt, pepper, sour cream, and warm milk to desired consistency. Combine all ingredients and whip until thick and creamy.

    I am a mashed potato connoisseur and this recipe is at the TOP of my list! To cut down on the amount of liquid, I removed most of the liquid created while cooking the mushrooms before putting into the mashed potatoes. Add more liquid as needed, but not all of it.

    This is first mash potatoes recipe I've made and it was very good. The potatoes will go great with the baked chicken I made.... Oh, and it was also very easy to make. :

    I'm not really a mushroom person, but my family is. I was skeptical at first, but this turned out so good. I will definitely make it again. I also substituted the wine for chicken broth (1/2 cup and added 4 garlic cloves. I also cut the butter in 1/2.
