    I have never been much of a cookie baker, however, these cookies turned out fantastic. They were a nice, light, crispy cookie full of texture. I really loved the addition of the puffed rice cereal--I must saw I was skeptical at first, but they made the cookie really nice to bite into. My family can't quit eating them! I dipped a few in the white chocolate and peppermint per the recipe, but left the rest undecorated as that is how my family wanted them. Great with coffee or hot chocolate. I think they would taste great with the addition of a little orange zest in the batter; and when done, dipped in white chocolate and crushed hard orange candy instead of peppermint.

    These cookies are delicious and a hit with my whole family. They were not hard at all to make. I dipped some in white chocolate and come in semi-sweet chocolate and my family preferred the semi-sweet. Since we have one that doesn't like peppermint, I didn't use it. Next time I make these I will not dip a portion of them as I like them better with no chocolate at all - they are delicious as is. They will certainly be a new addition to my favorite cookie recipes.     Wow~ I am fairly inexperienced with baking, and these turned out to be PHENOMENAL. I haven't even dipped in white chocolate/peppermint yet and they are to die for. I'm usually not a really avid lover of cookies necessarily, but this will be my "go to" recipe.
    Can easily alter the peppermint topping to suit any occasion. Thank you Paula!

    Awesome cookies. I deleted the oats and rice puffs and added butterscotch chips. Also instead of 1 cup of oil, I used 1/2 cup oil and 1/2 cup maple syrup. Delicious!

    I make Food Network recipes all the time but rarely take the time to post a review. These cookies are AMAZING! Yes they are quite a bit of work, especially if you do the chocolate dipping and crushed peppermint sticks but they are worth it! The presentation of the finished cookie is beautiful and I know that these will become a Christmas tradition in our home, NO DOUBT about it! Thanks Paula and thanks to your beautiful daughter in law's "Meemaw"!!

    Very good cookie, but a lot of work. I had a blast doing it. Thanks. Will give out for the holiday as gifts. I didn't dip I dropped a small amount on top and then did the peppermints.

    Great cookie and perfect especially if you're a dipper in coffee or tea because they are crunchy in texture and not at all too sweet. After the dough was chilled for the hour I thought they would not hold too well but they formed just fine. Also, they didn't flatten as I thought they would so I flatted with my palm. I didn't dip them in the white choco, instead I spread it on with an icing spatula. I especially enjoy the sweetness from the white choco and peppermint.

    OMG, These are delicious!!!! They are like a crunchy shortbread. The recipe calls for puffed rice cereal, I used rice crispies. I also used a small icecream scoop and then flattened them out a little. They were sweet enough so I didn't use the white choco. or the peppermint candies (that would be a little over the top. Very good, will make again and give as gifts. Paula, thanks for the great recipe.

    This recipe is very similar to a chocolate chip cookie recipe I make all the time. Very tasty! Also, to momma4ajg, the recipe calls for 1/2 pound butter, not 1/2 cup butter. That would be two sticks. Easy mistake. Happy baking!
