Ingredients
  • Vegetable oil cooking spray
  • 1 (10 3/4-ounce) can cream of chicken soup
  • 1 (10 3/4-ounce) can cheddar cheese soup
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 1 (10-ounce) can tomatoes
  • 1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
  • Unsalted butter, for greasing pan
  • 1 (11 1/2-ounce) package flour tortillas
  • 2 cups shredded Cheddar
Directions

Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray.

In a large bowl, stir together the 3 kinds of soup and the tomatoes. Stir in the chicken.

Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.

It is bland when you make it according to the recipe. It really needs to be modified: I season the chicken well while boiling. I use Ro-Tel tomatoes and have added a little of the chicken broth to thin out the chicken & soup mixture. I also put cheese between the layers. Very delicious! However, its is more like "mexican chicken pot pie" instead of a mexican chicken cassarole. As per the other reviews I also made the following changes to enchance the flavor: Rotel - Diced Tomatoes and Chili Trader Joes' - Organic Black Beans - Drained Trader Joes' - Mixed Shredded Mexican Cheese (YUM Rotiserrie Chicken - From Sam's Club It was PERFECT!! I was really disapointed there was nothing mexican about it. I usually love your dishes. I litterally just made this 3 hrs ago and LOVE it . so i did do some changes because i was scared that it would be bland. For the recipie as is i would give it 2 stars but it is a good starting point. I used a rotisserie chicken from the store cuts on prep time and also addes alot of flavor. i added some cilantro, red pepper flakes, and a can of diced jalapenos. we also used jalapeno and cheddar tortillas and it came out GREAT! and was not that spicy at all but added the needed flavor. item not reviewed by moderator and published
I read a few of the reviews that said the finished dish didn't have much flavor. To ensure that did not happen to me, I added a packet of taco seasoning to the soup/chicken/tomato (Rotel mixture. I also made sure to season the chicken very well with salt, pepper, onion and garlic powders, cumin and chipotle chili powder. To put more protein in the dish, I also rinsed a can of black beans and added them to the mix. I can't speak to what it would taste like if the recipe was followed exactly, but I'm guessing if the chicken isn't seasoned liberally, the result would be rather bland. This recipe was GREAT! Not only was it really tasty, but so simple to make. I made this casserole for my husband because he had been wanting some kind of chicken casserole. I have never in my life made any kind of casserole. He LOVED it!!! He took some to work with him and shared with co-workers. They all asked him to get the recipe from me. We have "Taco Tuesdays" at our house and ALWAYS have leftovers. When I saw Paula make this dish and then read the reviews I knew this would be a great way to use my Taco Tuesday leftovers. I too omitted the mushroom soup and used diced tomatoes with chilies, the pie pan idea was perfect, I used a deep dish pan. I also used the enchilada sauce in between the layers and used Mexican blend cheese for the top. When it came out of the oven I used all my leftover toppings from the taco's - diced onion, shredded lettuce and chopped black olives to top it with - the family loved it! Fair. Very common recipe with nothing new. I personally would decrease the amount of cheese. Two cups is a large amount. Use fresh veggies such as sliced toms, bell peppers or jalapenos (depends on your eaters. A very basic dish that can and should be lower fat and modified to your liking. I was intrigued with this recipe and wanted to try it even though I thought it looked pretty bland in its original form. Like the other raters, wasn't quite sure what was "Mexican" about this other than the tortillas. With some changes, I loved it! Here's how I fixed it: I used Nacho Cheese Campbell's soup instead of cheddar and skipped the mushroom soup. I used Rotel tomatoes with jalapenos (including liquid and chopped up half of a large red onion and added to the soup, tomato, and chicken mixture. Seasoned the mixture with cayenne and adobo seasoning. I layered it in a pie plate instead of a 13 x 9 - the large tortillas fit perfectly, one per layer and it is easy to slice. I planned to cook this for dinner and then looked at all the reviews, which I should have done first, apparently! I changed this up and melted a pound of Velveeta on the stove and mixed in a can of Rotelle Mild. I added in cut up chicken and used a whole roasted chicken. I then layered the baking dish with the flour tortillas and the cheese/chicken mix and repeated that so there were three layers. I added a thin layer of shredded cheddar cheese on top of each layer of the tortillas. I served this with sour cream, shredded lettuce and yellow Spanish rice. It was tasty and decent enough for a very quick weeknight meal - but nothing special. ok here is a good way to make this great, did it tonight and everyone wanted more, corn not flour rotel not just plain tomatoes add 1 tsp cumin ,1 tsp garlic powder , 1 1/2 tsp of black pepper , a little onion powder , 1 tsp of chile powder, and 1 1/2 tsp of tony chachere"s creole or to taste its like salt so taste it dont go to heavy whip it in the mix and enjoy, i put a can 10oz of old elpaso enchilada sauce half on the first layer and the last of it on the next layer also put about a whole precooked rotisserie chicken in it . if have to cook (diced chicken breast or tenders) use generous amount cajun (lo or no sodium type) seasoning when cooking w/ a little oil--adds some heat/spice, allow chicken to caramelize a little, substitute stewed tomatoes (kind of chopped up) for the tomatoes--could possible try the red type enchilada sauce also, add a little garlic (tsp), onion powder (tsp), cumin (1/2 tsp); didn't have the cheddar soup in pantry so used (extra) can crm of chick and added about 1 cup or more shredded cheddar to the entire mixture while heating,added a large can chopped green chiles too, used corn torts, had to add more chicken so casserole would not be too soupy (thin)--makes the torts mushy while baking -better if al dente, baked loosely covered for a while so cheese on top would not dry out/cook too soon, a good easy tweeking recipe! 7/7/11 item not reviewed by moderator and published

It went over great at my family gathering. I also added Rotel but I added one more thing, Chorizo (a very flavorful Mexican sausage) to it. I cooked the Chorizo with the chicken to give it a kick. I love reading the reviews of recipes to get little tips and tricks because I'm a beginner cook, and I get a little nervous with new recipes. I just finished this recipe, taking some advice from the reviewers, and I'm so happy with it! It was DELICIOUS! I made a few additions by including black beans and Rotel (with green chilies in the soup mixture, shredded cheese and green onions on every layer, and covering the casserole with foil until the last 5 minutes of cooking (and then broil_. It has a little spicy, but it isn't much, so I might add more chilies next time. ok so i rated this recipe a little low but it was better once I got done gussying it up. I put in like others corn tortillas, a can of green chilies, I topped it with tortilla chips. I also added two cans of black beans on each layer. I think if you don't like spicy mild green chilies are fine I would have liked to put a little spicier chilies but for the kids the one I used were mild. This recipe is like nachos if you make it like I did which was good everyone ate it. My kids love this recipe after tweaking a few things! I use corn tortillas instead of flour; I replaced the can of tomatoes with Rotel tomatoes and green chilies; added a few chopped green onions to each layer as well as some cheese.
