Ingredients

  • Vegetable oil cooking spray
  • 1 (10 3/4-ounce) can cream of chicken soup
  • 1 (10 3/4-ounce) can cheddar cheese soup
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 1 (10-ounce) can tomatoes
  • 1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
  • Unsalted butter, for greasing pan
  • 1 (11 1/2-ounce) package flour tortillas
  • 2 cups shredded Cheddar

Directions

Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray.

In a large bowl, stir together the 3 kinds of soup and the tomatoes. Stir in the chicken.

Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.

    Absolutely awful! I must have done something dreadfully wrong with that recipe. I knew from the ingredients it had to be... rather bland,but thought Paula Deen's recipe would be acceptable anyway so I made it for a church function. The flour tortillas did not cook into the soups and chicken mixture AT ALL. The mixture bubbled and seemed to be cooked through, however the soups were still runny and definitely needed much more time to cook. Can anyone give me some suggestions on what went wrong?Read more

    I love this recipe! I did however use Original Rotel Tomatoes and I use corn tortillas instead of flour. But everything else... is the same including the store bought rotisserie chicken. It makes it fast and delicious! I recommend for anyone on the go. It also reheats well if you are like my family and no one has the same schedule.Read more

    Needs more seasoning

    I agree with the comments that this would be very bland if made as written. I do a couple of things to spice it up. First,... I roast boneless skinless chicken breasts coated with a little olive oil and then seasoned with some southwest spice mix. I actually use Emeril's recipe for this, but taco seasoning would work too. I also add some of the Southwest Seasoning into the soup and chicken mixture. Also, Campbells makes a Fiesta Nacho Cheese soup which I have substituted for the regulare cheese soup. For the tomatoes I use the Rotel tomatoes with the chili's added. The casserole made these changes has always been a crowd pleaser for me. Read more
