My kids love this recipe after tweaking a few things! I use corn tortillas instead of flour; I replaced the can of tomatoes with Rotel tomatoes and green chilies; added a few chopped green onions to each layer as well as some cheese. I crushed up some tortilla chips and put on top, along with some shredded cheese. This gives it a little mexican flair and not spicy. Amazing!!

First recipe of Paula's that I was ever dissapointed with. Luckily it was inexpensive to make, but I won't be making it again. Stick to American Southern cooking darlin!!

I made this for my grand-kids and other family members and it was a hit! They request it every time I get to cook for them. Just easy and so delicious! I used an already cooked rotisserie chicken from the store, so I wasn't long in the kitchen!

I don,t like to use canned soup as they are bland & salty. I tried cream cheese, salsa, homemade cheese sauce and a jalapeno! It was great! magpitcairn ,Cobble Hill

I've been making something similar for years. Instead of cheddar cheese soup use 160z cream cheese, substitute RoTel (canned tomatoes and chilies for the tomatoes and we use tortilla chips instead of the corn tortillas. It gives the casserole some crunch! Oh, and I coarse chop one white onion and layer with the chicken.

Since canned soup has too much sodium I made my own soup base from a rue and added the cheddar cheese and used chopped sun dried tomatoes not in oil instead of the canned tomatoes and omitted the mushrooms. Instead of a whole chicken I cooked some non breaded chicken tenders and chopped those up and put in the soup base. I flavored with Mrs. Dash's table blend and a pinch of cumin, coriander and garlic powder and used corn tortillas instead of flour.

This recipe benefits from sauteing green onions, mushrooms and celery (for some crunch - THEN add all sauteed veggies to the soup mixture and layer with chicken and tortillas. I omit the tomatoes, and use about one cup of salsa through the mixture. Add homemade pico de gallo, sour cream, olives and green onion for garnish. Delicious!
