Good, but not the best
I also make a lot of PD recipes, but this one was not my favorite. It was super quick and easy to make. The muffins were very, very moist, but the taste was just so-so.

Almost perfect
I loved them, however I wanted them a bit sweeter, so next time I'll make them I'll use light brown sugar instead! I'm sure they'll be perfect then!

Michael's Banana Coffee Muffins
Not my favorite banana muffins
I've been making banana bread and muffins for years. I've tried a lot of different recipes for banana muffins and this was just OK. I make a lot of Paula n' sons recipes but this was nothing special. I guess if you're looking for muffins to have with your morning coffee it's good, but for the family, No!

The best ever
One thing very unusual I had all the ingredients to make this. It was the best and did not change anything. Going to make these again and again.

LOVE, LOVE, LOVE THESE!!!!
These are the best banana muffins I have ever tasted! I did add a small amount of cinnamon to the receipe and excluded the nuts ( I didn't have any in the pantry at the time), but are excellent hot out of the oven!!!!! You have to try this receipe.

Michael's Banana Coffee Muffins
The Best Banana Muffins I've tasted in a While.
I always seem to have half-brown bananas sitting and waiting to die on my counter. This time, I decided to do something with them. Now I know what to do with them every time. These were absolutely delicious. I did add a bit of cinnamon and freshly grated nutmeg, and half a teaspoon of espresso powder in addition to the coffee. I also sprinkled a few pecans over the muffin batter after spooning it into the cups. They came out hot, moist, dense, and perfect for an early breakfast. Next time I make these, I'm going to add a whole teaspoon of espresso powder (I couldn't imagine putting ground coffee, though. Coffee grinds get seriously bitter - that's why you don't keep them in the water when you make coffee.). I would also grease my muffin pan liners. These put up a fight in ungreased liners, unless they're hot out of the microwave. But, that's the best way to eat them. I'm aging bananas specially for these now!

I should double this.
Everyone that had some loved them! My boyfriend said it was the best muffin he ever had. I followed the recipe except added 1/3C hemp seeds and a splash of Morning Blend (blend of 7-fruit juices). I also used 2 T of ground coffee. The coffee taste was not overwhelming but still apparent. Very good!

Michael's Banana Coffee Muffins
Best banana muffins I have ever put in my mouth!!! And super easy!
I made these muffins because I had some 'too ripe' bananas laying around. My kids absolutely loved them. They were begging for more! I will definitely make these for when we are on vacation and need a quick and easy breakfast or snack. Love em!

"Great tasting muffins"
"I loved these muffins. My husband is a diabetic, so I changed the sugar. I used Splenda baking sugar and I only had 3 bananas, so I used 1/2 tsp.banana flavoring. These muffins were moist and great". Diane Hope, AR 11-07-09

A recipe I wouldn't live without.
My husband thinks these are the best muffins he's ever tasted. I make 6 jumbo muffins out of one recipe and what's left is stored in a plastic bag. They remain moist for several days. Just pop one in the microwave for 15 seconds and you would think they are fresh out of the oven once again. Thanks Paula and Michael for this wonderful recipe.

Brasil Loves them!
I am living in Brazil at the moment and since I needed something to take to my grandparents in law, I decided to make these. They LOVED them! they said they had never had anything like it. I have had to make batches for every member of the family: aunts, uncles, cousins, etc.! What a hit!

Super yummy
I cut back on the butter a bit and doubled the coffee & it still didn't have a very strong coffee flavor, but it tastes great with a cup of coffee! My muffin pans seem to have disappeared so I used a large loaf pan instead. Worked great, but I increased the cooking time to 40 minutes. I think I'll have a slice with peanut butter for lunch!

Still missing the coffee flavor...
As some other people, I used apple sauce instead of butter. I used Sugar in the Raw for a different feel and whole wheat & reg. flour to make it better for you. I used 3 bananas because mine were huge. I microwaved 2 tablespoons of water and mixed in one packet of instant coffee once it was hot. I figured that this should be super strong and the flavor should come out in the muffin. I had no such luck. It's a tasty and moist muffin. Next time I will add cinnamon and perhaps two packets of instant coffee (I need to use it up anyway). Mine made 12 standard muffins and cooked for 20 minutes.

Michael's Banana Coffee Muffins
Sooooooo Good !!!
Just made this recipe, and am tasting it hot out of the oven. Yummm!!!!! Took the advice of other reviewers and cut the baking soda in half, added chocolate chips instead of nuts, baked it in a loaf pan instead of a muffin tin, and sprinkled sugar on the top before baking. It couldn't be better ... so, so good!!!

good, but not great
This is a pretty standard banana muffin recipe. The muffins are moist and tasty. If you're looking for a coffee flavor though, this isn't it.
