    Everyone that had some loved them! My boyfriend said it was the best muffin he ever had. I followed the recipe except added 1/3C hemp seeds and a splash of Morning Blend (blend of 7-fruit juices). I also used 2 T of ground coffee. The coffee taste was not overwhelming but still apparent. Very good!

    I made these muffins because I had some 'too ripe' bananas laying around. My kids absolutely loved them. They were begging for more! I will definitely make these for when we are on vacation and need a quick and easy breakfast or snack. Love em!

    "I loved these muffins. My husband is a diabetic, so I changed the sugar. I used Splenda baking sugar and I only had 3 bananas, so I used 1/2 tsp.banana flavoring. These muffins were moist and great". Diane Hope, AR 11-07-09

    My husband thinks these are the best muffins he's ever tasted. I make 6 jumbo muffins out of one recipe and what's left is stored in a plastic bag. They remain moist for several days. Just pop one in the microwave for 15 seconds and you would think they are fresh out of the oven once again. Thanks Paula and Michael for this wonderful recipe.

    I am living in Brazil at the moment and since I needed something to take to my grandparents in law, I decided to make these. They LOVED them! they said they had never had anything like it. I have had to make batches for every member of the family: aunts, uncles, cousins, etc.! What a hit!

    I cut back on the butter a bit and doubled the coffee & it still didn't have a very strong coffee flavor, but it tastes great with a cup of coffee! My muffin pans seem to have disappeared so I used a large loaf pan instead. Worked great, but I increased the cooking time to 40 minutes. I think I'll have a slice with peanut butter for lunch!

    Still missing the coffee flavor...

    As some other people, I used apple sauce instead of butter. I used Sugar in the Raw for a different feel and whole wheat & reg. flour to make it better for you. I used 3 bananas because mine were huge. I microwaved 2 tablespoons of water and mixed in one packet of instant coffee once it was hot. I figured that this should be super strong and the flavor should come out in the muffin. I had no such luck. It's a tasty and moist muffin. Next time I will add cinnamon and perhaps two packets of instant coffee (I need to use it up anyway). Mine made 12 standard muffins and cooked for 20 minutes.

    Just made this recipe, and am tasting it hot out of the oven. Yummm!!!!! Took the advice of other reviewers and cut the baking soda in half, added chocolate chips instead of nuts, baked it in a loaf pan instead of a muffin tin, and sprinkled sugar on the top before baking. It couldn't be better ... so, so good!!!

    This is a pretty standard banana muffin recipe. The muffins are moist and tasty. If you're looking for a coffee flavor though, this isn't it.

    love the idea of adding fresh ground coffee to muffins!!

    i did like other commentors did, used splenda and walnuts and less butter. muffins are notorious for being high calorie and high fat! absolutely perfect for a quick grab and go. if you are expecting the muffins that taste like coffee cakes, this is not it. it is more of a light banana bread. the bananas retain their flavor though the coffee.

    These are possibly the fastest and best banana muffins I have made from scratch-If you have 4 bananas on the counter run to the kitchen and make these muffins-I made them at 10 PM and had to restrain myself from eating more than one!-By the way I had enough batter to make 12 regular size muffins and 4 jumbo muffins-spray the liners with cooking spray for easy release and then hide them from yourself until morning

    WOW that was easy!...and yummy!

    This was a very easy recipe...just cut down on some things...I used Splenda instead of sugar (because the bananas were very ripped and syrupy, I should have used half of the amount) I used about a tablespoon of the butter instead of 1/3 cup (I was very surprised to see because other recipes called for 1 stick and a half of butter, and knowing Paula!...no need for more!) only used 1/2 cup of walnuts....very moist and tasty! I definitely will make again!

    Very easy to make!! I was very disappointed in the lack of coffee taste. I love coffee "anything". I made the recipes into a bread loaf. I served it heated with additional butter. Don't know if I would make it again as there are so many other receipes out in cyberspace.

    PERFECT WITH TEA OR COFFEE WITH THE GIRLS!

    SImple and easy 1 bowl preparation. I used chocolate morsels instead of nuts and added a sprinkle of sugar on top before baking, Bakiing time per recipie perhaps a bit to long, check at 22-25 minutes. Moist and delcious..I will definitely make again!! BRAVO MICHAEL

    It wasn't the best muffin recipe in the world, especially since I could taste the baking soda in every bite I took. I'm kinda disappointed with this recipe. My search for the perfect muffin recipe goes on...
