    Banana and Coffee, what more could you ask for? This was an instant hit with my family, and it will be our go to banana muffin recipe. My family doesn't like nuts so omitted them and added a mixture of oats, cinnamon, brown sugar, and butter to the top for nice crunch. Yum Yum YUM!

    I've FINALLY found the perfect banana bread recipe! Moist, wonderful pillows of banana yumminess! I've tried so many different recipes, not so much because I love banana bread, but more because we always seem to have leftover ripe bananas in the house. The coffee element interested me, so I thought I'd try it out...it was wonderful! You can't taste the coffee, rather it just adds a little depth to the overall flavor. I omitted the pecans (just because my kids don't like nuts, and added one handful of chocolate chips instead. They were great!!!

    My husband "requested" banana-pecan muffins from me the other day and after a short search, I decided to make these. They are DIVINE! I used whole wheat flour and only 3 bananas (I didn't have more left...My hubby likes them a lot. I put melted chocolate on top of each muffin.

    Love this recipe!! My coworker ask me to make these about once a month. I add mini chocolate chips and substitute one shot of espresso in place of the coffee. So good!!

    These are so yummy, you are missing out if you omit the coffee, it gives it more of a chocolaty taste.

    OMG. Just used ground coffee and worked well. Couldn't resist and added in 1/2 C bran buds for 1/2 cup flour. AMAZING CREATION SENT FROM ABOVE

    i made this over easter vacation..i made them in small loaf pans instead since we had no muffin pan, left out the nuts. just sliced and warmed in toaster with just a little butter. my family just ate the whole loaf for breakfast, and i have a request from the kids to make them for breakfast tomorrow too. thank you-delicious!
