I've been making banana bread and muffins for years. I've tried a lot of different recipes for banana muffins and this was just OK. I make a lot of Paula n' sons recipes but this was nothing special. I guess if you're looking for muffins to have with your morning coffee it's good, but for the family, No!

One thing very unusual I had all the ingredients to make this. It was the best and did not change anything. Going to make these again and again.

These are the best banana muffins I have ever tasted! I did add a small amount of cinnamon to the receipe and excluded the nuts ( I didn't have any in the pantry at the time, but are excellent hot out of the oven!!!!! You have to try this receipe.

I always seem to have half-brown bananas sitting and waiting to die on my counter. This time, I decided to do something with them. Now I know what to do with them every time. These were absolutely delicious. I did add a bit of cinnamon and freshly grated nutmeg, and half a teaspoon of espresso powder in addition to the coffee. I also sprinkled a few pecans over the muffin batter after spooning it into the cups. They came out hot, moist, dense, and perfect for an early breakfast. Next time I make these, I'm going to add a whole teaspoon of espresso powder (I couldn't imagine putting ground coffee, though. Coffee grinds get seriously bitter - that's why you don't keep them in the water when you make coffee.. I would also grease my muffin pan liners. These put up a fight in ungreased liners, unless they're hot out of the microwave. But, that's the best way to eat them. I'm aging bananas specially for these now!

Everyone that had some loved them! My boyfriend said it was the best muffin he ever had. I followed the recipe except added 1/3C hemp seeds and a splash of Morning Blend (blend of 7-fruit juices. I also used 2 T of ground coffee. The coffee taste was not overwhelming but still apparent. Very good!

I made these muffins because I had some 'too ripe' bananas laying around. My kids absolutely loved them. They were begging for more! I will definitely make these for when we are on vacation and need a quick and easy breakfast or snack. Love em!

"I loved these muffins. My husband is a diabetic, so I changed the sugar.
I used Splenda baking sugar and I only had 3 bananas, so I used 1/2 tsp.banana flavoring. These muffins were moist and great".

My husband thinks these are the best muffins he's ever tasted. I make 6 jumbo muffins out of one recipe and what's left is stored in a plastic bag. They remain moist for several days. Just pop one in the microwave for 15 seconds and you would think they are fresh out of the oven once again. Thanks Paula and Michael for this wonderful recipe.
