    Made these for the sweet tooth of the house and he LOVED them. I made this w/instant espresso powder disolved in a few drops hot water. Would like to try w/the applesauce, whole wheat flour and maybe less sugar (don't like substitute sugars--they make you gain more weight. These are a great tasting breakfast muffin!

    To make the receipe healthier and higher in fiber, I used whole wheat flour, applesause, 1/2 splenda, 1/2 sugar, and an egg substitute (but I did add chocolate chips!. I also used coffee grains in place of the brewed coffee. They still taste moist and satisfying.

    We loved these muffins. I had some bananas to use up but a poorly stocked pantry, so I ended up using a combination of white and brown sugar, self-rising and whole wheat flour, and almonds. The muffins came out light and tender with wonderful texture and flavor. This recipe is a keeper!

    I loved the taste and texture of these muffins AND they were easy to prepare (one bowl. For the 1 1/2 cups flour, I used 1/2 cup WW flour and 1 cup AP flour. For the sugar I used blue agave nectar (organic, low glycemic sweetener. They turned out great. Made 12. No nuts.

    This is a wonderful, tasty muffin. I use toasted chopped almonds with great results and use coffee liquer (I don't drink coffee. This will replace my banana bread recipes. Thanks!!

    I decided to bake these one night while I was cooking dinner. Although I omitted the nuts- this recipe is so good! This recipe is so easy and quick to make! ALthough it calls for coffee- I think it is for added moisture b/c you can't taste the coffee at all. My husband is not a big fan of my baked goods and prefers the pre wrapped muffins- but he ate all of these with in 24hrs.
    Thank you for posting this recipe, and anyone who like's bannana muffins- I highly suggest this recipe.

    I tried to make these a little lower in calories, so I did half splenda and half sugar. Also used apple sauce in stead of butter, but added 1/2 tsp. baking powder. They still turned out so well I didn't even need to put butter on them. Leave it to Paula!

    I just made these and ate one warm, wow it was good! I couldn't taste the coffee at all so that was a little disappointing, and I didn't have any nuts so I threw a couple of handfuls of chocolate chips to make it a treat. I will make this again!
