Ingredients

Pastry:

  • 1 cup water
  • 1 stick margarine or butter
  • 1 cup sifted all-purpose flour
  • 4 eggs

Filling:

  • 3 cups milk
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 6 tablespoons all-purpose flour
  • 3 eggs
  • 2 teaspoons vanilla

Icing:

  • 2 (1-ounce) squares chocolate
  • 2 cups sugar
  • 1 cup whipping cream

Directions

Preheat the oven to 400 degrees F.

Heat water and margarine or butter to boiling point. Add flour and stir constantly until mixture is smooth and forms a ball when tested in cold water. Remove from heat and let cool. Beat in 4 eggs, one at a time. Drop dough from teaspoon to form small eclairs onto greased cookie sheet. Bake for approximately 30 minutes or until light brown. Set aside to cool. Prepare filling by combining milk, sugar, salt and flour; cook slowly until thickens. Add 3 beaten eggs and continue to cook until mixture is even thicker. Remove from heat, cool and add vanilla.

With a serrated knife, slice pastry puffs lengthwise, but not all the way through. Pipe custard mixture into the center. Melt chocolate for icing, add sugar and cream. Cook over medium heat until soft ball stage. Let cool and beat until smooth. Ice tops of the eclairs.

    This was my first attempt at making eclair dough. Yesterday I made a banana cream pie and had some left over cook and serve... Vanilla Pudding. So I thought of eclairs. I was surprised how easy the dough was! I am glad I did not try the custard filling or frosting based on the other reviews. i have never heard of a frosting make with granulated suger unless it was cooked. My little eclairs puffed up wonderfully. I only needed to cook for 20 minutes, not the full 30. I used up my vanilla pudding and for the frosting, I just melted some chocolate chips and drizzled over the tops. I have seen so many recipes online at Foodnetwork, with errors in them, and it seems they never get corrected. thanks to the comments sections and people taking the time to make their own corrections, many of my recipes have been diverted from disaster.     The recipe was poorly written

    First of all, I am a huge Paula Deen fan, own several of her books, and bake her recipes often. I am an avid and seasoned... baker, but this recipe gave me lots of problems. and was a huge disappointment! To begin with, when the instructions indicate to cook the filling until it thickens and then again until it gets thicker, that is too vague. A time line for cooking the filling would be more appropriate. Mine had a weird texture when I got done with it. It was edible and I used it anyway, but I feel it should have had a smoother texture. Secondly, I followed the frosting recipe to the letter. It calls for 2 squares of chocolate. Since it also calls for two cups of sugar, I assumed I should use unsweetened chocolate. I used a candy thermometer to ensure that I cooked it to "soft ball" stage, but the frosting was very grainy - the sugar didn't dissolve, which leads me to believe that perhaps the recipe should have specified powdered sugar? I had to toss the frosting which was a huge waste of time and money and use another favorite chocolate frosting recipe of mine. which turned out delicious. The eclair shell was easy to bake and came out good, but that was the best part of the entire recipe.Read more

    I made these to take to someone house over the holidays... I used regular sugar for the frosting and hade to throw it away...... should it of been conf. sugar instead...the frosting never hardened and tasted very griddy...just like sugar.... also the filling was just okay for a Paula recipe... but will make again but use a different glaze for the top....     Absolutely fantastic... Delicious.... These were a huge hit with my co-workers. The dough was light and flaky and the... filling was creamy and decadent. These do require a little bit of work when it comes to the filling, but it is definitely worth the effort. Just be sure the filling is completely cold before attempting to fill... or it simply oozes out the sides. Read more
