    I haven't made eclairs in years but this recipe is exactly as I remember. Excellent! Not sure why so many people complain about the filling. I have made many custards and perhaps they just didn't incorporate the eggs properly or allow it to get hot enough. I took the temp to 170 over a med. heat stirring constantly. That is the trick. It was sweet, creamy and smooth as silk.

    I really did not like this recipe. The pasty turned out okay, but the filling was horrible! I guess that's what I get for trying to save time by trying a quicker recipe...

    Everyone who ate these thought they were delicious, but they took -much- longer than I had anticipated. I started around 7 at night (on a whim, of course and didn't finish till nearly 10! Also, the icing did not turn out as I expected at all (I didn't know if you were to use powdered or regular sugar, so I went with regular, instead of being thick and chocolaty, it was watery and more of a caramel appearance. It was delicious nonetheless, but not how I anticipated it at all. I would have rated 3 stars, however since they still turned out yummy 4 stars it was.

    very tasty even when it was my first ever time i did that kind of pastry. But I did use just 3 eggs but it was a hit with my father!!!!!!!!!! Thanks PD:

    Filling was good, but NOT WORTH THE TIME!!! I am an avid baker and was VERY disappointed with the finished product, I could have bought better eclairs in the store and saved myself 3 hours. The chocolate topping was disgusting-very gritty and not appealing at all.

    Problem with your recipe? This may help. First take your dough mixture of the stove BEFORE you add the eggs that will allow them to rise when they get in the oven. Found that out after my THIRD try also, for the frosting use caster sugar (ultra fine sugar or use ten x sugar makes a better frosting. Love this recipe other than those few little tweeks.
