    This recipe is great as are just about all of your receipes. I have all of your books. My sister tried to get me one at your resturant, but would not wait in a two block line!

    As for the ugly one with no life.....please DONT include all of us Southerners in your profile....We are nothing like YOU!!

    Although I found myself to be crawfish challenged (I screamed in the kitchen every time a crawfish poked my finger!, I was so proud of myself to present this amazing treat to my neighbors last night. My hubby has been away and after I put my five children to bed, I decided to head into the kitchen to try this recipe. I was up well past midnight (I also made the collard green wontons and LOVED them!!!, and it was well worth the effort. The only thing I'm wondering is what I did wrong with the crawfish. I bought a 3 lb. bag of frozen ones and pulled out a third, to equal the one pound called for in Paula's recipe. After I peeled the tails (and because I've never had them before, it's possible I peeled them all wrong!!, I only ended up with a ramekin full, not the big, lush bowl full Paula had on her show. Should I have used the entire 3 lb. bag to end up with a pound of tails? In any event, they came out great and my neigbors loved them. I froze the left over filling and plan to toss it with some pasta over the weekend. YUM!!! Thanks for sharing, Paula! You make this Irish New England Girl wish she was from down South! :

    I have been making crawfish pie for years, but never did I think of a muffin tin and never have I had such an awesome crust! It melts in your mouth. Paula, you make this girl proud to be from the south! Keep those authentic southern recipes coming!

    This is a great recipe. The crust is exceptional. Sure hope you all can ignore the boob with the personal attacks. Must be very sick and have no life.

    I eat boiled crawfish all the time but I believe that this recipe is better than anything else crawfish that I've ever tasted.

    Very good but a little different from the crawfish pies I usually fix. If you can get seafood stock I would use that instead of the chicken stock. It will give a better flavor. I also did not realize that "Emeril" owned all the Creole and Cajun recipes from New Orleans. Is he aware of this?
