Made these for my son's 50th birthday party.....Big hit.. I read the reviews and did two mayo's, one with more tarragon and then one with cilantro. Of course the family ask for these for our family football Sunday snack. You made me look so good, thanks

Very good, I chose to use more tarragon and that mayonnaise was delicious! Def a good choice for a party of some sort, very easy to make so it wouldn't be too time consuming!

I've made this a dozen times. Everybody love these. Make the mayo way in advance and let it meld for awhile. Resist the temptation to overcook the pork. I double the marinade for the pork, I think it adds more flavor. Make lots, it's awesome the next day.

My family would have given this 5 stars. All the flavor is in the mayo! I used Cilantro instead of tarragon. You will want to use it on everything. All I had was Meyer lemons and they are not as tart so maybe that is why I didn't not have much flavor from my pork. Very yummy though.

Everyone loved these and have been requesting them again. They were moist and flavorful with the tarragon mayonnaise adding the perfect touch.

I tried this recipie tonight, my mother and I had it as a sandwich but my father had it as just the pork on the plate. The meat was extremely tender, juicy, and flavorful.
