Ingredients
- 3 eggs
- 1 1/4 cups packed light brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 (12-ounc) jar creamy peanut butter
- 1 stick butter, softened
- 1/2 cup multi-colored chocolate candies
- 1/2 cup chocolate chips
- 1/4 cup raisins, optional
- 2 teaspoons baking soda
- 4 1/2 cups quick-cooking oatmeal (not instant)
Directions
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats.
In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.

Great recipe! Just a few tips...I didn't use raisins, I just used more chips. I put in butterscotch chips instead. It was beneficial to let the dough sit so the oatmeal can absorb all the wet stuff. There isn't any flour so that needs to occur. Also, when rolling the cookies, it's beneficial to make sure the dough forms a solid dough ball, otherwise they spread out and aren't as firm. Great flavor and turned out wonderful. I'm not usually a Paula fan but these were fab!

Added some Reese's pieces and used a 15oz can of peanut butter. I also chilled the batter before baking. Cookies were fabulous!

These cookies were very good! I also liked the fact that you don't have to use any flour.
I baked them for 15 minutes, because our family likes our cookies a little more crisp...I also creamed the butter, sugars and eggs first... then added the peanut butter, and the rest of the dry ingredients to the recipe. My little one also convinced me to add reeses pieces to the mix as well... Enjoy!
