Very simple, which is why it's so good. Perfect for the 2 of us. Can't wait to make a sandwich for lunch tomorrow. I figured dinner cost us around $2.00 with green beans and mashed potatoes!!

I really loved this dish. It was very moist and juicy, thanks to the onions and peppers. However, next time I would omit the sauce. It was very similar to BBQ sauce, which I'm not a big fan of. Just use ketchup, or nothing, as it is so juicy on its own.

My son as NEVER liked meatloaf. With this one he was finished with his serving in less than 5 minutes!! My daughter had two helpings and so did I. Delicious & very simple. I will make it again& again. Added 1/4 garlic powder, used half yellow & half Dijon mustard, my only tweaks. Thanks for a keeper :

Thanks Paula for another SUPER recipe. I made this for Sunday dinner and invited my parents over. I made your Cottage Potatoes and mixed veggies with your velveeta fudge for dessert. Everyone was so busy eating we hardly spoke until the dinner was over. It was fantastic! (You are quickly becoming one of our family's favorite food gurus. Fantastic!

My mom laughed and laughed when I told her I put oats in the meatloaf. Once she tasted Paula's meatloaf, my dad said they've been having Paula's meatloaf at least once a week. (Ha Ha Thanks again Paula for the best recipes ever!!! P.S. - My dad thanks you too!

I tried this meatloaf on Sunday night w/ my daughter and her family. The kids didn't like it at all, but the adults thought it was 'just ok'. It was easy to make, but i'll keep looking for other recipes to try. I think the oatmeal gave the recipe to much of a mushy taste, although I liked the idea of adding it since it is so good for us. Thanks anyway, Paula.

My husband is an identical twin. Both he and his brother like to cook. My sister-in-law and I have both noticed that whenever we cook something new, our guys will say, "That was good, but it would be better if..." It's become a family joke. Tonight I made this meatloaf, and before I even sat down, he said "This is good." After supper, he said, "I don't think I'd change anything about that recipe." WOW!

My favorite thing about this meatloaf is the sauce on top. It's so sweet and delicious. It's super simple to make, sometimes I'll mix up the meatloaf a day or two in advance, then it's ready to go in the oven as soon as I get home from work. It's a great meal for 2 with a little leftover if you don't make anything else to go with it, I'd imagine it would serve 4 easily with a side or two.
