So, my husband said "Could you make an old fashioned meat loaf - you know like Paula Deen would make?" How could I not try this? WE LOVE IT! In fact, I make two at a time and freeze the second loaf. One 14.5 oz can of diced tomatoes does the trick to double the recipe. We defrost it and microwave portions as needed. Thank you Paula - once again you ROCK!

It was pretty good for my first time. The topping was amazing! Next time I'll definitely put a lot more topping on it.. Great dish. I'm definitely going to make it again.

Didn't have the 8oz diced tomatoes w/ juice... so I used a replacement like I saw a "Food Network Star" contestant use on the show where Paula Deen judged the food. Paula Deen LOVED IT on there! I used 1/2 a small can of tomato paste, 1/2 cup buttermilk, and another 1/4 cup of oats. Oh and just for flavor's sake I added 1 tsp garlic powder and a few dashes of oregano. YUUUUUUUUUUUUUUMMM!!! It is EXTREMELY DELICIOUS :D PS: Paula Deen told the "Food Network Star" contestant who used the buttermilk and tomato paste instead... that it makes it MUCH MORE MOIST. Delicious. Thank you Paula Deen!!!

I made this recipe last week and I have to say I was highly disappointed. The texture of the meatloaf itself was GREAT...however, the taste was HORRIBLE...it was very BLAND. The sauce was good. You will have to twerk this recipe to your like with a few more seasonings thats for sure!!

So good! I processed the oats, onions, some garlic, some carrots, and a little parsley in the food processor. I pulsed the red pepper so it would be chunkier. I didn't have a can of tomatoes so I used one roma tomato and about and 1/4 c of salsa. This meatloaf is so good. Next time I will cut back on the salt, too. The whole family loved it!
