Ingredients

  • 2 cups peeled, cooked sweet potatoes
  • 1 1/4 cups sugar
  • 1/2 stick melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 cup milk
  • 9-inch unbaked pie crust
  • 3 egg whites

Directions

Preheat the oven to 350 degrees F.

For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.

For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

    i'm eating it now and the first 2 bites....i thought it was great and now i just think it's good. i wish that it had more... spices in it- maybe a little bit of nutmeg and cloves. i used emerils crust recipe....not all that (it's a bit hard and not flaky at all). i should've just used anne burrell's crust recipe (my favorite thus far). so anyways, i had to bake my pie for A HECK OF A LOT LONGER than what was recommended....like by another 30 minutes. i guess i'm more into pumpkin pie than i am sweet potato but this is a nice recipe. thanks paula!Read more

    OMG!!! This the first time i've had true success making a sweet potatoe pie, in fact my husband says it's one of the Best... he's tasted. There were a couple of things I changed to this recipe... I used two large sweet potatoes, once they were peeled and smashed, there was more than two cups I found that I had more than enough to make one pie so I made two, I adjusted the recipe a little by adding a little more ginger and cinnamon I also added 1/8 tsp of nutmeg. One last thing the recipe doesn't tell you how you should cook the sweet potatoes so I baked them like I would a regular potatoe. This is one recipe I would strongly recommend to all Very Easy!     if you are use to "city cooking" then dont try this recipe. Yes it is sweet but that's the best part. Anyone from the true... south will tell you that is how we eat.     Looking at all the reviews for this recipe I decided this was the one to try. I pre-planned for some of the problems and... eliminated them ahead of time. This being a first attempt at sweet potato pie, I thought it tasted great!!! Increased the potatoes to 2 1/2 cups & added a 1/4 teaspoon nutmeg. I also increased the temp to 360 degrees for the last 30 minutes. The total cooking time was 90 minutes. The pie rose a lot more with the increase in temperature, without cracking, & worked perfectly. Using a store-bought crust, the edges didn't burn at all, and didn't taste too bad.     I used boubon for my extract. I used petmilk. I put it in a blender with all the other ingredients. When the pies were done... and cooled down from the oven. We bit into a piece and it was like that movie Ratatouille. I was taken in a dream world back to my child hood. Those pies have story to tell. My family loves these sweet potato pies. I will keep this recipe from now on. I took them on the road to my mom and she just about filpped over the taste of these sweet potato pies. She went directly to the website copied Paula Deen's recipe. The pies are sweet, sweet. So you may want to modify the sugar a bit. The bourbon heightens the sweet taste. But after all they are Sweet potato pies. Enjoy!! Thanks Paula Deen. I gave this rating a 4 because the cooking time is not accurate. it is good to know that when your toothpick comes out clean your pie is ready. Petmilk is better for the consistency of sweet potato pies in my opinion. Read more
