I was surprised to see the allspice, since it is not in traditional beef stew. However, I went along with it, Mediterraneanizing it further with cinnamon. I used leeks and green onions instead of the regular onion, omitted the Worcestershire and cornstarch as well. I hate murky soup so I seared and then braised the beef separately in beef broth and red wine along with the bay leaves and then ran the stock through a sieve before adding to the veggies. I had charred 5 tomatoes on a wood-burning grill a few nights before, so I juiced them and added the juice to the soup as well. I did not add sugar since the tomatoes had enough IMO. The final product was really fantastic. If you add wine or tomatoes like I did, give it significant time to reduce. I realize this made it a completely different recipe than Paula’s, but I can’t take full credit since I used her recipe as a base.

This recipe was my first attempt at making stew--and I loved it! It was how I thought beef stew should taste. I added some golden potatoes, a can of green beans, and a can of corn, along with the carrots, and celery. Because my pot was so full, I doubled the spices, and added several cups of extra water. I also threw in a couple of beef bullion cubes. The stew was delicious. I served it with cornbread. Even my one-year old and four-year old ate it up! From one Southern girl to another, "Thanks, Paula!"

I'll be honest...I'm having a hard time making this work and I'm not sure what I'm doing wrong! I'm a fairly experienced cook and have tried (and loved several of PD's recipes over the years, but this one is not working out for me! I've made this beef stew three or four times. My meat is dried out and I have no stew broth left after cooking. I've tried playing with the water and spiced levels but it's either dried out with a good flavor or tender with no flavor! Anyone else having a problem?

This is one of my all time favorite recipes! I always double the spices and add 4 russet potatoes as the starch.

This was super. I had only half as much beef as was called for, so I added some extra vegetables at the end (some more carrots and some green beans, and I didn't have any Worchestershire sauce, but the flavor was still terrific. The allspice really made it, I think. I'll definitely make this recipe again, and will try to make sure I have everything I need this time. :P

This recipe was great. I followed the directions, but substituted beef broth instead of water and also threw in about 1/4 cup of white wine, in addition to about 1/2 cup of peas. Turned out awesome. I served it with biscuits.

Exactly what I have been looking for! Used beef broth instead of water & added potatoes. As the kids walked in the door one by one, they all said MMMMMMM! What's for dinner!?!?! Next time will add some different veggies, we dont have celery lovers here. Maybe green beans or peas with carrots & potatoes. Mushrooms would be good too! I agree that it does need a bit more kick but great recipe that can be altered anyway you like. On my go-to list!
