I'm an amateur fudge maker, but have made a few batches with moderate success, and decided to give this recipe a whirl, despite the mixed reviews. I altered the recipe slightly in that I let the fudge cool to 120 degrees F before beating in the butter and vanilla, as I was afraid it wouldn't set otherwise. This seemed to work well, although my batch came out a bit grainy. (Could I have over-beat it? Speaking for those starting out in candy making, this was not the clearest recipe, but if you can get it to work, the results are DELICIOUS. Thank you, Paula, I'm sure my boyfriend will be thrilled.

This recipe is good if you have made fudge before and know the basic steps, but not a good recipe for first-timers to fudge. If you had trouble with this one, check out Alton's chocolate fudge recipe. It is also pretty good, and it describes more of the steps you have to take to make the fudge set up.

After slaving over the stove for half an hour, and following the directions to a T, the fudge never set up. My 4 year old son made it with me and was so bummed that our fudge was a bowl full of mush. This recipe needs to be altered or removed so no one else wastes time and ingredients on this!

I don't know how anyone who used this recipe turned out well. It doesn't specify how long to cook over stove-top AND what is the "form a soft ball in cold water" advice?? Was it supposed to float? I didn't understand at all. Not only was that confusing but also didn't specify how long to mix or beat or stir (didn't know that either the fudge after cooking! What a joke!
I was so disappointed. I made two batches and they both turned out like slop. This recipe needs to be removed.
Paula should be ashamed.
