    This is the best tasting, moistest oven fried chicken I've ever eaten! I so love it! The only change I made was I used Inglehoffer's honey mustard because I like that better than Dijon and they were delicious! I've made oven fried chicken before and none of them came out like this recipe. I think Paula's best trick for this was the olive oil in the crumbs and cooking it on a rack. I've also used this chicken in a salad, just like you would for a chicken caesar salad, but different. I chopped up some bacon and fried it. Then I mixed it with a big bowl of chopped romaine, chopped seeded tomatoes, cut the chicken in bite-size pieces and put it on top. Then I got an envelope of ranch dressing mix and made it and poured it over everything, sooooo good! I think Paula would like this one, I think I made it even better with bacon and the mayo in the dressing! Great for a hot summer night when you want something cool to eat! Thanks Paula, for this great recipe and all the other countless wonderful ones!

    I made it last week and again today. It was Delicious!...Even my picky 9 yr old couldn't stop talking about it. I did make some changes. I don't like mustard, so I substituted that with ranch dressing. Reading the other reviews I took note about the the chicken being a bit salty, so I reduced the parmesan cheese to 3/4 cup and I added a generous amount of Emeril's Essence to the Panko mixture. It came out so crunchy and tasty! This will be a regular at my house!

    I was very excited to make this tonight. However after reading the comments I made sure not to add any salt. It still turned out way to saltly. The meat turned out nice and moist, but the combo of the salt and Dijon was just no good.

    Very easy and delicious! I was a little wary of trying mustard instead of egg whites, but it tasted great and my 5-year-old didn't even notice the dijon. After dinner, my husband commented that with some red sauce, it would make a great fake veal parmesan.
