    Good stuff. I like to use corn flakes instead of bread crumbs, but, this is an easy delicious meal

    This could have been a lot easier. First, I didn't really measure anything, I used my palm as a guide because I'm always stuck with left over ingredients and it goes to waste. I put the breadcrumbs, maybe a cup (I had plain on hand- not panko, on a paper plate. I then mixed in grated parm, salt and pepper, and about 1 T dried thyme- with the breadcrumbs. I don't really like Dijon but I use the Country Dijon and it seems to work. In a separate bowl I mixed a few spoon fulls of Dijon with about a tablespoon of olive oil. I wiped each piece of chicken, front and back, with the dijon mix. I then dredged the chicken in the breadcrumb mix to coat. I baked it just as she suggested and it turned out TASTY!! I didn't see the need in putting the S&P in a bowl of water...what a mess. This is a good recipe for on the fly. If you know the basic ingredients you can do it w/o measurements.

    For a quick dinner I used shredded peices of a boned and skinned precooked rotisserie Chicken from the store. Just took a quick cook to warm through the chicken. Delish! Great flavor and Crunch! Also a great calorie cutter

    I've tried 2 other oven fried chicken recipies in the past, and I like this one the best! It does taste a little similar to the chicken you would make for chicken parmesan, but the panko gives it a really great crunch which brings you back into the "fried chicken" realm. The only thing I'd do differently in the future is cut back on the salt. I also used Panko Italian crumbs, and that might be why it was a little too salty. Also, I didn't use fresh thyme because when you put fresh cut herbs into an oven, they begin to burn. I used dried thyme- it was fine. I didn't want to risk 40 mins of burning herbs!! : I'd definately make this if I had family coming over- good stuff! : Thanks Paula! Get it girl!!!!

    This was delicious!! The whole family loved every bite - had to cook about 40 minutes though - I think my chicken wasn't pounded thin enough....
