Made this this evening, great recipe. Used A very good Cognac (Hennesy Privilege and premium Ice Cream. My wife went back for seconds which is unheard of. Cognac didnt fire but what the heck, it tasted great.

Ho Hum. I couldn't get the brandy to light either. Nothing special and the family was not impressed.

I make very few desserts but I couldn't resist this one. Good thing; it was wonderful. I did learn a lesson, though, when I couldn't get it to flame. My husband was standing next to me and watched me stir the mixture after the brandy went in. He called it before I even tried to light it. Next time I won't stir before I light it. It still tasted just great!

A little restaurant secret: Add some vodka to the brandy.

This was great! I would highly recommend. I did change it up a little, I didn't have the pitted cherries, so I used a can of cherry pie filling, and omitted the sugar and cornstarch, but still did everything else the same. Thanks Paula!

This was such an easy but elegant dessert for New Years. Loved the fact that it was sweet, but not too sweet. This was one of the best Cherry Jubilee that I have ever had.

As a quick desert experiment, I made Paula's Cherries Jubilee for a group of friends, most of whom had never had Cherries Jubilee before. I used frozen dark cherries and Triple Sec instead of Brandy (no brandy on hand. Everyone was so impressed with the desert that I'm now being pestered by them to make it again and again.

I thought this recipe was wonderful. My family LOVED it and there were no left overs. I am putting this in our regular desert routine. It is one of those that is so easy to have all the ingredients in your pantry and it is quick to whip together if you are in a jam for a quick desert. So yummy.

Mixture did not flame. Cherries should be heated prior to adding to mixture.
