Great and simple recipe. I had to use black olives because I could not get kalamata olives and I added the zest from the lemon to the dressing. It was delicious.

Couscous is created by mixing semolina wheat with water, and the little grains that clump together are coated in flour then dried. The result is essentially a pasta in grain form. Some is very fine, like what Paula used in this recipe - it's like tiny pasta spheres. Israeli couscous is much larger in grain, similar in size to bulgur wheat. Every supermarket I've been to in NJ has some form of couscous - look in either the international section if there is one, or in the grain section. Most prepackaged rice kits have a couscous version too.
When in doubt, use google or wikipedia to find any term you don't understand. I guarantee you'll get a more comprehensive answer than what some schmuck responding to your questions will give you.

what is couscous?.....as old as i am i have never heard of it and if i can't find it can i use a subsitute ? ty annie

this is so easy to make and very quick. overall i thought it was pretty good but felt it need a little more flavor so i added some balsamic vinegar to taste and it was perfect!

My new fav side dish!
I add parmesan to mine and instead of using plain couscous, I substituted with couscous w/ pine nuts.
I served it along w/ Rachel Ray's recipe 'Spring chicken roll ups with pan lemon dijon sauce.
i had a dinner party and it was a HIT!
LOVE this recipe!

Served this dish as a side dish during Hanukkah dinner....everyone loved it! Only changes I made, were, I used Israelly couscous, and I added a few artichoke hearts chopped up. I served it chilled, and it had wonderful flavor.
