Ingredients

  • Craft sticks
  • 12 apples
  • 2 cups sugar
  • 1 cup brown sugar, packed
  • 2/3 cup white corn syrup
  • 2/3 cup butter
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • Chopped nuts, if desired

Directions

Insert craft sticks into stem of apples. Mix all the ingredients, except the vanilla and nuts, in a large saucepan: cook, stirring constantly, to 240 degrees F on a candy thermometer. Remove from heat and let cook until mixture thickens. Add vanilla. Quickly dip apples in the mixture and twist until apples are evenly coated. Place on waxed paper to drain and firm up. If desired, roll candy apples in chopped nuts.

As I thought this recipe tasted good the directions were wrong as to the temp that the caramel has to get to.It SHOULD be 260 deg F to get to hard ball. Also should mention to get apples that don't have a wax coating on them OR give directions as to what to use to get the wax off.I use lemon juice.I have heard baking soda and cider vinegar works well too. Hope this helps those that might have had the same trouble I did on the caramel coating the apple.

I wish I had read the reviews before wasting my time and money on these! The flavor was ok but by the time the caramel was thick enough to stick it was too thick to stick then ran off anyway! I just peeled it all off and used it as caramel dip for apples. I love Paula but this recipe is terrible.
