Ingredients

For the Magical Peanut Butter Cookies:

  • 1 cup peanut butter, creamy or crunchy
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Strawberry Ice-Cream:

  • 1 cup whole milk
  • 1 cup whipping cream
  • 2 cups half-and-half
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups diced strawberries

For assembly:

  • 6 tablespoons strawberry preserves
  • Peanut butter chips or chopped peanuts, optional

For the Magical Peanut Butter Cookies:

Directions

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, 1 cup sugar, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar. Cool slightly before removing from pan.

Strawberry Ice-Cream:

In a small bowl, whisk together the first 5 ingredients. Puree the strawberries in a food processor and add to cream mixture. Pour the mixture into an ice cream maker. After freezing in the ice cream maker, transfer to a container and place in the freezer, to freeze solid, for 6 hours before serving.

For assembly:

Spread the strawberry preserves on a peanut butter cookie. Top with a small scoop of strawberry ice cream and cover with another cookie. Roll sides in peanut butter chips or peanuts, if desired.

    So easy even a child can make these...

    This is my first Paula Deen recipe. I hardly watch TV, but was flipping channels and came across this recipe. I immediately... went to make them, and my three year old son had to help. He got to roll the balls, and roll them in sugar. Doing the cross hatch with the fork was lots of fun for him. Then of course, he helped eat them. My husband isn't much of a peanut butter fan, but these cookies went really fast. I used all the sugar in the cookies, but would probably cut it slightly next time. I never got to the ice cream part, but the cookies are Awesome. They will be my secret weapon for my work cookie exchange/ contest next year! Read more

    Once again Paula has made an easy, fool-proof recipe that rocks!! I DID use all of the 1.5 cups of sugar instead of... sprinkling or rolling them in, and it wasn't too sweet at all, they are awesome!! We love you Paula and I now have a memorized cookie recipe without using flour, amazing!!! I also got over 2 dozen with heaping teaspoons ! My Mom will love these!Read more

    I was just reading the comments and saw that a lot of people have said that the peanut butter cookies are too sweet. Well if... you read the directions to the recipe is states that you use 1 cup of sugar. Not the full 1 1/2 cups that it states in the ingredients. I hope this helps alot of people.     Wow. I love this recipe. I make it when i ever have free time. Not the whole thing just the cookies. or i use the ice cream... and jelly on regular cookies i bought too. the cookies you can also add semi sweet chocolate about a half or a cup if you want which makes it taste out of this world! i always make this before people come over. And every time you can change it a little. Instead of vanilla extract you can add cinnamon or chocolate. it is a great easy recipe.
