Peanut Butter Brownie Cupcakes

Directions

1 (18 1/2-ounce) package chewy fudge brownie mix (recommended: Duncan Hines)

1 (12-ounce) package peanut butter chips or 24 miniature peanut butter cups

 

Preheat the oven to 350 degrees F. Line 24 regular muffin cups with paper cupcake liners.

 

Prepare the brownie mix according to package directions for cake-like brownies. Fill the cups half full with brownie batter. Place about 1 tablespoon peanut butter chips in the center of the batter, or press 1 peanut butter cup into the batter in each muffin cup until the batter meets the top edge of the peanut butter cup.

 

Bake for 18 to 20 minutes, until the cupcakes are set. When they can be handled safely, remove them from the muffin tins and let cool completely on wire racks. Store in an airtight container.

Very easy but very yummy!! And special enough to take for events. My coworkers loved these. Even the super healthy guy had a second! They've come to expect big swirls of frosting so I added some from a cupcake wars recipe, it was called Chocolate Peanut Butter Ball Cupcake I had planned to also swirl ganache but for easier cupcake packing, I like to frost once getting to where I'm going and wouldn't have been able to keep the ganache warm. I've made this recipe on several occassions and have even used different flavor of chips -- white chocolate, mint, toffee, as well as peanut butter. People always rave about them. Yes, it is a simple recipe, and if all of Paula's recipes were this simple I could see why people complain, But this is the simplest recipe I've seen from Paula and I think it was a nice addition to a show with more complex dishes. My 11 year old son made these & they were delicious!!! He used a small cookie scoop & only got 15 cupcakes. I think it's better if you put in 2 TB batter on bottom, a few peanut butter chips in the center, then 2 TB batter on top. As soon as you remove from the oven, top each cupcake with a few peanut butter chips so they will stay on the cupcake. C'mon folks. This was a great RECIPE ? particularly when pressed for time AND you have a 10 year old niece who ALWAYS wants to help when I?m baking. A recipe is defined as "...a set of instructions for making something from various ingredients..." Well so what if some of the ??various ingredients...? are all packed together in a box. It worked so let?s not be so critical. The neighborhood kids loved these and so did my co-workers in the office. We all know (or should know by this time) that what happens on TV is not exactly what may appear in the website recipes. How could anyone hose up such a bonehead simple recipe? Something was lost in the translation. She used a standard 12 cup pan, she added the chips and covered them over. You need to use the liners or they will stick--they are brownies after all. And because they are, baking time is critical. You WILL only get 12, not 24. For some odd reason, this only made 11 cupcakes (and I did not fill all the way to the top). Used mini-peanut butter cups. Pushed it in till just part of the top was showing, and then smoothed batter over. I did not use cake liners, but instead sprayed the heck out of the muffin cups. As a result, the PB cup ended up at the very bottom of the muffin cup. So, where the cups had stuck to the muffin tin, I carefully removed them and then put them back into the brownie cupcake (this only happened to a few). I used Aida's peanut butter ganache recipe (bittersweet chocolate, vanilla, PB, and of course, heavy cream), and dipped the BOTTOM of each brownie cupcake into the ganache, thus sealing the pb cup into the cupcake. And boy, did it taste good. So, the top became the bottom and the bottom became the top, and with the ganache, it turned out pretty darn well. I usually do not use mixes, but I had had good success with this for a weeknight dinner party where I was tasked with dessert. With all the crap Sandra Lee makes with her Semi Homemade garbage, at least she actually adds something to it besides tearing open a bag and adding water and oil. Please don't call this a recipe. I used the betty crocker fudge brownie mix. Maybe there was too much leavening agent in there, b/c my cupcakes sank further and further as they cooled. At any rate, I still don't see what's so special about this that it got so many rave reviews. My husband declared these the best brownies ever (don't tell his mom - we are newlyweds, so I'm not sure I've earned it yet!). He requested that I make these again since I first tried them two weeks ago, and has already re-stocked the pantry for a third time!! This recipe only makes 12 cupcakes when you fill them to the top, which I did. I also used Dove chocolate covered caramels and pushed them inside and smoothed over the tops. I also used a vanilla buttercream frosting on top with some drizzeled caramel and chocolate shavings. My Mother in-law also has a good recipe. Take a 9 by 9 pan and pour half of a brownie mix then put 2 big hershey bars side by side in the middle then cover with the rest of the brownie mix and bake. There seems to be some confusion. I didn't watch the show, so maybe someone can verify this for me; but the recipe does not say anything about putting batter over the peanut butter chips, once they are added. All the recipe says is to put the peanut butter chips on top of the batter, then goes on to give directions about adding peanut butter cups into the batter if you are using those instead of chips. Someone here commented that on her show, Paula put batter over the peanut butter chips. Since there are so many comments here about not getting the quantity the recipe states, it could be because they are putting batter over the pb chips. By doing this, you won't get 24 cupcakes.. The recipe says to fill only half of the cupcake holder, then add peanut butter chips. (nothing else.) I made them and added a little batter over the pb chips and got only a dozen cupcakes, but they are delicious! This is a wonderful cupcake. When I first read the recipe I thought there's not going to be anything super about the recipe, but when I tried it I was so surprised. The cupcakes were moist and yummy and the candy gave it a wonderful peanut butter flavor. I truly fell in love with this recipe, I would've never imagined that something so simple would be so good, but I was wrong. This recipe is ridiculously easy and delicious. I do make a couple of modifications though. I use a mini muffin tin instead of regular sized muffin one. I prefer the proportion of peanut butter to brownie :-). I also use the Whole Foods Organic Brownie mix. It's actually inexpensive and has chocolate chunks in the mix- not sure if that makes them better or what. Now, it could have been my oven, although most recipes turn out fine at the required cooking time, but these turned out a bit dry for me. I used the recommended brownie mix and followed the recipe precisely.....the taste was good but if they had been a bit more moist, I would have loved them. I will try the recipe again at a shorter cooking time...if that doesn't help, I will try it again with 2 eggs rather than the designated 3. This recipe was fast and fudgey. Exactly what was needed for a chocolate craving. I used a Duncan Hines Dark chocolate brownie mix I picked up on sale and Reese's peanut butter chips. One bowl, one spoon, no muss no fuss. I filled the muffin tin about 1/4 full with brownie batter and added the chips and then filled the rest of the cup with batter. I admittedly went a little crazy with these, but whats the point of baking if you can't have a little fun? I bought the turtle brownie mix with walnuts and the caramel sauce you squeeze on top. I put the peanut butter chips in the center. When they were about 3/4 of the way done I took them out and pressed some mini marshmallows into the tops. These are heavenly !!!!! I used a brownie mix that contained a packet of chocolate syrup and it called for only 1 egg so this was not a cakey type brownie-but is didn't matter ! I used peanut butter chips (probably about 6 in each cup) and baked it 10 minutes longer than the printed baking time. After they cooled I topped them with a chocolate cream frosting. I ate one and then I HAD to give the rest away to my neighbors. The number of cupcakes you get from this recipe is more like 15 when you use "regular" size muffin pans. Also, the cooking time is off by about 5 minutes. I know all ovens vary, but my oven was 25 minutes. I get a bit nervous as nobody needs to overbake a brownie. The end product was good as I like Duncan Hines Brownie Mixes the best.
