These were great. I made them using my mini muffin pan so I cut each mini peanut butter cup in half and laid them flat side down. I also felt it needed just a little something else, so I spread a small dollop of hot fudge ice cream topping to the top of each. They were a big hit! Will definitely keep this recipe on hand!

I made this recipe for New Years Party. My husband and children loved it. I would agree to add more butter to the crust to improve the foundation for the cheesecake. A water bath would have improved the appearance of the cheesecake after baking to keep it from cracking. For those who say it lacked flavor; I used almond extract it was tasty. I would make this again.

I decided to make these little treats for a Christmas party my parents were headed to and offered to give a hand to my mom to bake something. These cheese cakes are so simple, yet so cute and they taste great, everyone thought they were really tasty and the peanut butter cup added to the surprise. Thanks Paula will def. make again! PS.. the only thing i changed was that i added a little bit more butter to keep the crust together a little more because or else it felt a little to crumbly.

Ah! So good! I, fan of all things small, made these in mini size and they were a hit! I bought the mini Reese's cups that are sold around Halloween time and inverted them as others suggested and it turned out great. I also added about a tablespoon of butter to the crust and used the end of an ice cream scoop to really tamp down the crumbs into each cup. And making them mini meant automatic PORTION CONTROL. You'll need it when it comes to these delicious bites!

Made these for a family bbq - awesome! I read alot of the reviews & made some changes: 1 I recommend only using vanilla extract - used almond & leaves a taste not agreeable w/everyone 2 inverted the bite size cups 3 pressed the crust down w/a small measuring cup & had NO problem w/ it breaking apart 4 for an added touch, melted choc chips & peanut butter then drizzled it on top of the cheese cakes - added flavor & great presentation 5 made about 20 minis total. Ready to try another Paula Deen recipe!

yumm..it was delicious! the batter will pretty much fill up the entire cupcake liner but it won't overflow since it doesn't rise. I used one more tablespoon of butter to my crust just so the crust wouldn't crumble. I cut each mini cheesecake in half because there were more people who came over for a bbq than I expected. Either way, it was delicious and surprisingly a satisfying amount even though it was a half. But I did add whipped topping on top, sprinkles of chopped reeses pieces and vanilla ice cream on the side. Perfect Combination!

I am always my toughest critic so I was a little dissatisfied with the crust, mine came out a little bit more crumbly than I would have wanted, but the cheesecake part of it was delectable! Everyone who tried these little delicacies thought they were delicious and i'll admit, I did too. They were pretty darn easy to make, and in the end I had extra filling left over, and sadly I didnt know what to do with it. Next time, I will use maybe more butter in the filling, or possibly just use a little less of it. I might also try to switch up the candy filling, or try to make a peanut butter cream layer. :
