Peanut Butter Cheese Fudge

Ingredients
  • 1/2 pound sliced easy-melt cheese (recommended: Velveeta)
  • 1 cup (2 sticks) butter
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts
  • 2 (16-ounce) boxes confectioners' sugar
Directions

Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts.

Empty confectioners' sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff.

Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm.

To serve, cut into squares.

LOVE IT!!!!! YUMMY!! When I was little, I use to put a slice of cheese on my peanut butter and jelly sandwich. I LOVE CHEESE!! So when I saw this, I was not at all inhibited on trying it. My 12yo daughter made this for me and OMG, it is da bomb!! The only reason why I didn't give 4 stars is because it didn't set. If I keep it in the fridge, it hardens well. But after being out on a platter for half an hour, it begins to soften way too much. Other than that, this recipe is a hit...as usual!! I made this yesterday and just plated it up. I didn't find that it had a velveeta taste at all. It was rather good, just wish it had more peanut butter flavor to it. I saw a review that someone dad did it as chocolate fudge. So I googled it.. instead of peanut butter it called for powdered coco. This was the nastiest recipe I have ever tried. I actually put less velveeta than what the recipe called for and (of course it didn't set up right, but the worst part: it still tasted like Velveeta with melted peanut butter. I attempted to make this last night. When I was working the candy into the pan I slipped on some overspray, and I landed on my back with the fudge on my chest. I followed the recipe exactly, and it turned out perfectly. I used my mixer's metal bowl to melt the cheese, butter, and peanut butter over simmering water. I took the melted stuff over to the mixer with the dough hook attached. I then added the powdered sugar to it, and it mixed up easily. I transferred it to a 8 x 8 pan lined with buttered aluminum foil. I put it in the fridge for about 4 hours, and it came out perfect. My only issue is that it didn't taste very peanut butter. If I could give this recipe 10 stars I would. This has to be the easiest and best Peanut Butter Fudge ! I used my double boiler to melt the butter,Velveeta Cheese, and Peanut Butter. I placed the Powdered Sugar in my mixing bowl, and used my Kitchen Aid Mixer with the paddle attachment. The dough is really stiff, and the mixer worked very well, and mixed everything without a problem. I made one batch of peanut butter fudge, and one batch of Nutella Hazelnut fudge. Like everyone else, I thought "Velveeta...really??" BUT IT IS AMAZING!!! I think the cheese is what gives this fudge such great consistency. I added some milk chocolate chips to my fudge, right at the end when the fudge is cooling. The chocolate slightly melts, giving the fudge a really cool marbled look (and it takes great too!!) This fudge was very tasty and I loved it, but for some reason it did not get hard enough to cut and place on a platter, it is still very "limp"...guess I did something wrong? But it was still really delicious...any suggestions anyone on how to make it get hard like fugde is supposed to be. This is a wonderful fudge recipe, I have made it many times and as always it is up the the palet of the individual as to if it is for them. reading some of the reviews I came across some that were very harsh calling paula a hack and that she stole the recipe, she is using her own variation on a recipe with many variations. I have to admit that I made this because I was so intrigued by the cheese! I've never made fudge before and really don't like it but my husband loves it so I thought I would make it for him for Christmas. This was so easy to make although it didn't seem like the wet ingredients were going to mix in with the sugar but they did just fine. It is the easiest, creamiest, best fudge I have ever eaten. I don't like chocolate fudge and have always gone for the peanut butter fudge if there is a choice but never had any as good as this. Paula used to be number ONE in my book, I bought several o f her books, and she is VERY DEAR TO MY HEART! But lately i have been very disappointed because her recipes are either WRONG, unfinished, missing stuff, etc. Take the video for the "fudge" it demonstrates that should have "Marshmallow Cream and also Evaporated Milk" and where is it in the recipe??? It never showed any cheese at all!!! In another video the "4 Minute Pound Cake" Where is the recipe for it??? It is very "SAD and awful!" And then she laugh so much that she never even finishes the demonstration. It is nice that she have so much fun and I am also very happy for her success that was a very deserving one. If this recipe didn't have so many positive reviews I wouldn't even have considered trying it. The thought of peanut butter and velveta together made my stomach churn. This was amazing! I made two batches, but probably could have gotten away with only one because it's so rich. I thought I had ruined the first batch because when I added the peanut butter to the butter/cheese mixture, everything separated and coagulated. It looked disgusting so I set it aside, waiting for it to cool before I threw it away. I tried again and it happened again. I decided to throw the rest of the ingredients in and pour it over the sugar anyway to see if I could somehow get it mixed together. Success! Everything blended together perfectly - it isn't gritty either. It's very smooth and velvety. I was drawn to this recipe out of curiosity...Velveeta in fudge?!?! I whipped it up in 20 minutes just like everyone says and...HOLY MOLY is it good!!!! I mean AMAZING!!! :) I've never made fudge before, but I'd like to consider myself a "sweets" conosuer and this fudge tops the charts :)~ The only thing I changed was the size of my pan-I used an 8x13 instead of the smaller square one and it filled the pan! This recipe was way good. Very tasty but it has so much flavor that you could get easily sick of it. LOL So I recommend wating two or three pieces with a glass of milk. It really hits the spot! Oh and when you stick it in the fridge you may have to dry the top part a few times with paper towel cuz the butter kinda makes it all greasy. The whole time I was making this I kept shaking my head thinking how this would never work. Who am I to question Paula Deen? This is awesome and so easy. Of course, I don't tell people it has velvetta in it. On the show, Paula mixes the cheese/butter mixture into the sugar with her hands which I found much easier. The mixture is hot, so be careful. I buttered my hands, which helped. On the show she also recommended you melt the cheese first, then add the butter. This was awesome. I took it to work and everyone loved it. To speed up the cooking time while the cheese and butter were melting in the pan I microwaved the peanut butter for about 30 sec. then added it to the cheese mixture. This fudge is very easy to make. I only used 1 1/2 sticks of butter. Cutting the butter down prevented the butter from puddling on top of the fudge. I also tried it with both smooth & crunchy peanut butter. Both were good even though peanut butter fudge is not my favorite. I preferred the chocolate. To Carolyn in Canyon County, CA. Tasted great to me and I thought it would be a hit with family and friends. Not! This was a very easy recipe that is very good, however, none of my family liked it. Some said they could taste the cheese, some said it was toooo sweet, some just don't like peanut butter. My parents liked it, but they are not allowed sweets....go figure! Anyway, since I would be the only one eating it, and I don't need to be the only one, I sent it with my mother to give to her students.
