Ingredients
- 1/2 pound sliced easy-melt cheese (recommended: Velveeta)
- 1 cup (2 sticks) butter
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
- 2 (16-ounce) boxes confectioners' sugar
Directions
Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts.
Empty confectioners' sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff.
Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm.
To serve, cut into squares.

YUMMY!! When I was little, I use to put a slice of cheese on my peanut butter and jelly sandwich. I LOVE CHEESE!! So when I saw this, I was not at all inhibited on trying it. My 12yo daughter made this for me and OMG, it is da bomb!! The only reason why I didn't give 4 stars is because it didn't set. If I keep it in the fridge, it hardens well. But after being out on a platter for half an hour, it begins to soften way too much. Other than that, this recipe is a hit...as usual!! Thanks again, Paula

Tastes so good! Sweet and smooth....like fudge should be.... not "sugar grainy"...like fudge should be.
So quick and simple to make...a perfect holiday treat to make when things are hectic. I'm tossing all my other peanut butter fudge recipes! Yum yum!

I made this and brought it to a Christmas party. One of the guests wanted to know who made the fudge. Her husband is a chef and she said that she never tasted anything like it. When I told her the recipe she just couldn't stop laughing. Velveeta!! No way! Anyway it was a big hit. Everyone loved it. Thanks.
