Ingredients

  • 1/2 pound sliced easy-melt cheese (recommended: Velveeta)
  • 1 cup (2 sticks) butter
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts
  • 2 (16-ounce) boxes confectioners' sugar

Directions

Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts.

Empty confectioners' sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff.

Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm.

To serve, cut into squares.

    This is a wonderful fudge recipe, I have made it many times and as always it is up the the palet of the individual as to if... it is for them. reading some of the reviews I came across some that were very harsh calling paula a hack and that she stole the recipe, she is using her own variation on a recipe with many variations. Todd in indiana reviewed as if she was poisoning people, my god it's a recipe TODD ... calm down, if you could get involved with your community in charity work with as much conviction as you have for this fudge your town would surely benefit greatly..... just a thought !! and I love ya paula.Read more

    Who would've thought - cheese?

    I have to admit that I made this because I was so intrigued by the cheese! I've never made fudge before and really don't... like it but my husband loves it so I thought I would make it for him for Christmas. This was so easy to make although it didn't seem like the wet ingredients were going to mix in with the sugar but they did just fine.     Don't let the velveeta scare you!

    I was hesitant about trying this because of the Velveeta. It just sounded weird. You would never guess that there was any... sort of cheese in it at all.     It's hard to believe how delicious this fudge is considering how easy it is to make with the minimal amount of ingredients.... We've even made it a holiday tradition here.     Ok - Food Network screwed up and put the video for a different fudge in the videos section of the recipe. This is not a case... of a misprinted amount of an ingredient (which certainly deserves a low rating). The video is for a super easy peanut butter fudge that according to what I've been reading - is so easy it doesn't require a recipe. THIS recipe is for a peanut butter fudge made with cheese. Yes - it's a mistake but don't give the recipe 1 star if you HAVEN'T EVEN TRIED THE RECIPE. By the way, this fudge is really good.Read more
