Ingredients

  • 1 (8-ounce) box pitted dates
  • 30 pecan halves
  • 10 to 12 slices bacon

Directions

Preheat oven to 400 degrees F.

Stuff each date with a pecan half. Cut each slice of bacon into 3 pieces. Wrap 1 piece around each stuffed date and secure with a toothpick. Bake until bacon is crisp, 12 to 15 minutes. Drain and serve.

    I made Paula's date recipe for a French club and it was the hit of the party. I stuffed 30 dates with pecans, wrapped them... with bacon, cooked them at 400 degrees for 15 minutes in the morning, and reheated them in the microwave for 90 second on high heat.     My husband and I went to a party last night, someone brought paula's bacon wraped dates, my husband did not know what they... were but he is a huge bacon wrapped chicken liver fan, I don't make them very often because of his high cholesterol, he sat right next to me and told me they were the best bacon wrapped chicken livers he has ever had, so here I am printing this recipe off to make them and probably quite reqularly.Read more

    I was really looking forward to making this recipe: I thought it sounded scrumptious with the combination of the sweetness of... the dates, the crunch of the nut, and the savoriness of the bacon. Unfortunately, the nut just disappears(taste and crunch-wise) and the bacon flavor is totally overpowered by the sweetness. It doesn't taste bad, just a disappointment. I tried halving the date, next I'll try quartering it, in order to get a more equal flavor of date and bacon...may also use two nuts. Definitely needed (at least) 15 min. to cook bacon to crispness and I suggest turning them once half-way through for crispier bacon. If you like this recipe concept, you might want to also check Dave Lieberman's version stuffed with ricotta cheese instead. One thing I love about Paula's recipes: they are great jumping off points for one's own creativity. I was never a cook, but I frequently read her recipes and think: I bet that would be good with/as....and then tweak it myself.Read more

    When I couldn't remember what Paula stuffed the dates with, I substituted cream cheese for the pecans. Smokey, sweet and... cheesy. What a combination.Read more
