the longest task in this recipe is smashing the candy cans. fun. i used 2 - 11 oz bags of nestle white chocolate chips (which is a little under the recommeded amount. i smashed 12 regular sized candy canes in the wrapper which does cut down on mess as recommeded by an earlier reviewer. thanks for the tip. i smashed 2 extras canes to spinkle on top prior to putting in the freezer. perfect. i was going to add the peppermint extract but i actually forgot. no worries, it tasted perfect. my 14 year old boy and husband, who don't typically like peppermint, loved them. never wrote a review before!

This peppermint bark is awesome! My family loves it and it is extremely easy. I like it with the extract, but it still taste great without it. Also, if you like the candy canes extra fine (or just want to save some time, you can pulse them in the food processor.

This recipe is quite simple and very good. Rather than using a double boiler, I simply melted the chocolate in the microwave. Also, I used the recommended 2 teaspoons of peppermint oil for my first batch, but it wasn't minty enough for my taste. For my second batch, I doubled the mint and added 4 teaspoons.

THIS RECIPE WAS BOTH WONDERFUL LOOKING AND TASTY. NOT ONLY THAT, IT WAS SUPER EASY AND FUN TO MAKE WITH GRANDDAUGHTER ZOEY WHO WAS 8 YEARS OLD AT THE TIME. SHE HAD A GRAND TIME BASHING THE CANDY CANES (WHILE EATING SOME, TOO!AND HAD AN EVER BETTER TIME WHEN IT CAME TO TAKING CREDIT FOR THE CANDY. SHE MADE A POINT OF TELLING EVERYONE WHO GOT A TASTE THAT SHE HAD "DONE IT HERSELF"!!

This was a Christmas goodie that both my older and younger cousins were begging me to make more of. I made other bark as well, but this one was the winner.
