Ingredients

  • Crushed candy canes, to yield 1 cup
  • 2 pounds white chocolate
  • Peppermint flavorings, optional

Directions

Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

    Use the Peppermint Extract - This is delicious and easy

    I just made this for the first time ever, making peppermint bark. I used 2 3 oz. Lindt bars and two bags of Ghirardelli white... chips. I melted the chocolate in the microwave ratlher than double boiler. Just stir it every 30 seconds. After I put in the crushed candy canes, I added 1/2 tsp of peppermint extract and it came out perfect. I will be making this every Christmas from now on. Thanks Paula. My name is Paula, too.Read more

    This is really easy to make and its great at Christmas time... I gave some away as gifts and served it with dessert at dinner... and it was hit! Yummy. I kind of added too many candy canes (didn't follow the recipe exactly) so i suggest you stick to the recipe guidelines. Using bakers white chocolate makes the peppermint bark very smooth and creamy (don't use chocolate that DOESN'T contain cocoa butter!) Read more

    I came across this recipe a few days before Christmas and I'm certainly glad I did. Fun, easy, and delicious! A big hit... with family and neighbors. Using Nestle's white chocolate morsels worked out great. No problem at all with melting. I didn't use peppermint extract or flavoring other than candy canes. Placing several apx. 1/4" pieces of peppermont to the top of the mixture after it's spread made the Peppermint Bark look even more appealing.Read more

    Peppermint bark is so easy to make and it's always a big hit with almost everyone. Adding peppermint extract is really... essential, in my opinion. I do not recommend using Nestle or Ghirardelli white chocolate - these are not made with cocoa butter at all. I recommend Lindt or Baker's white chocolate. Either of these brands will melt quickly and taste very creamy & rich. I sometimes add a dark chocolate layer to this recipe. In a double boiler, melt the dark chocolate (at least 60% cocoa) and then spread onto cookie sheet covered with wax or parchment paper. Refrigerate until solid then spread the melted white chocolate mixture on top and sprinkle a little more crushed candy canes on last.Read more

    A slightly less sweet alternative!

    I loved this recipe but I found the white chocolate and peppermint to be very sweet, so I used about 1 cup of dried... cranberries and 1 cup of crushed walnuts with 1lb of white chocolate morsels. It was a delicious hit at the holiday potluck! I also found it better to make 1lb batches at a time so that the chocolate spread thinner and was easier to break into nice bit size peices.Read more

    I used semi sweet chocolate chips on the bottom. I added a little peppermint extract to that. I then chilled in the fridge... and added white chocolate on top with the candy canes chopped up. I melted both chocolates in the microwave - 30 seconds at a time on 1/2 power and stirring in between. Much better results for the white chocolate than on the stove - easier too! Read more
