    I just made it on a whim today because a friend of mine loves white chocolate peppermint bark and complains about the kinds that come with the dark chocolate layer.

    I melted the white chips at 70% power in the microwave (I did it 30 seconds at a time until I could stir it... leaving the chips to melt as I stirred. Then I crushed about 6 candy canes in a heavy Ziploc freezer bag....just took the backside of my heavy ice scream scoop and wacked the candy canes up to the desired consistency. I stirred it together and spread them on parchment paper.

    I find parchment paper is best! It pulls right off without a fuss. I've tried wax paper (sometimes sticks and even a little Pam cooking spray (makes the bark a little greasy - ew!. After an hour in the fridge, I broke the bark up and it was PERFECT. My husband thought I bought it. And seriously, prep for this was 10 minutes max! LOVE this!!!

    For the person who asked why their bark separated (the white chocolate from the dark chocolate layer.... try chilling the dark chocolate for 5-10 minutes then adding the white chocolate. If the dark chocolate is a little warm, it will adhere to the white chocolate layer better. Be careful when you spread the white chocolate on though, so it doesn't swirl in dark chocolate streaks. Hope that helps!

    I made this for the first time to go with my pile of holiday cookies for my office. It was a total hit! Two people immediately asked me for the recipe. It's so incredibly easy...I made with 1.5 capfuls of peppermint extract in with the chocolate. Next time, I think I'll experiment with layers of different types of chocolate. It's definitely now a staple in my holiday baking :

    I tried making this with a layer of dark choc on the bottom but when trying to break it up out of the fridge the bottom layer is breaking off of the white bark. any tips for next time?

    Wow! This was very, very easy to make. I used the microwave to melt the chocolate so the hardest part was un-wrapping the candy canes. I'm not known for my cooking, so my Mom was impressed this morning when I brought some into work.

    I will try some of the variations next time, but for less than $10 I?ve got several nice homemade presents.

    I love this recipe - it's a hit every Christmas! HINT: I do ths in the microwave. Easier and faster! Just do 30-60 seconds at a time on 50% power, stirring in between until it's warm and smooth, then continue with the recipe as ususal. I add peppermint extract AFTER it's melted. Also, non-stick foil works beautifully for this recipe!

    thanks everyone for all the extra advice. I made these for the 1st time today. I added some drak chocolate on top. I added two cap fulls of the peppermint extract also. Im going to make it without the dark chocolate for my next batch. Very good..

    Erica, re: flavoring: I used 1-2 small capfuls of the Peppermint flavoring. I found that it really is needed.

    Hillary re: HELP. You can use either white chocolate morsels (Nestles or the white chocolate melts found in the Wilton decorating section of craft storea and Wal-Mart.

    I am making my batch this weekend!

    I used a layer of white chocolate then chilled it, then a layer of milk chocolate and cream with peppermint extract melted together and then chilled that layer and topped it with paula deans layer, it was fabulous.

    I just made this using 2 bags of white chocolate morsels, 1/2 tsp. of peppermint extract, and 1 c. of crushed peppermints. It came out beautiful -- and tastes great! Creamy and not too overwhelmingly minty.

    I would like to make this real soon but I don't know what kind of WHITE chocolate to use. Can you use the white chocolate chip morsels?
