This recipe has it all - easy, pretty, and delicious! I followed Emeril's recipe suggestion of straining off the powdery bits of peppermint before adding to the chocolate, but don't waste it. A pinch of this "peppermint dust" really perks up a cup of hot chocolate!

Looking rorward to making myself. So-o-o-o expensive to purchase. I'm really interested in adding a layer of chocolate on the bottom. What type of chocolate and do I add anything to this layer? Should I chill the cocolate layer first?

I followed the recipe but instead I melted milk choc. first and let it sit for 15-20 minutes in the frig. then after it chilled I followed it up with layering the white chocolate and spread it all over it.... and of course of the wonderful peppermint!! Beautiful presentation! The color contrast! wow! I'll have beautiful bark to give away as presents!

This was a pretty good recipe, although it was a bit hard to work with at first. It would have been made easier if there was a general amount of Peppermint Extract for the amounts of chocolate and candy cane pieces. I ended up using quite a bit, but then again, everyone I know loves the mint flavor. And then 1 cup of candy cane pieces didn't seem like enough for the amount of bark, so I ended up using an additional half cup. Anyway, good recipe! Loved it.

I originally made these for a cookie exchange party. They were such a huge hit that I am making them again for Christmas-as presents and dessert. Also, I made 2 batches- one white chocolate and another (as recommended in a review with dark chocolate swirled in with white chocolate. The dark and white mixed were an even bigger hit! This was an easy, quick, inexpensive treat for me to bake and share with loved ones.

I'm a pastry chef, and to answer your question on storage... chocolate will stay good for 6 months if properly stored IE: Ziploc bag or Tupperware container. So as for giving this treat out as gifts, you're in the clear. I love this recipe, i use it every year :

As everyone has already mentioned, this recipe is delicious. It can sometimes get a little sweet or heavy so I smash some pretzels and add those in too. It really tastes great that way for people who like the sweet and salty combination.

We have made this the last couple years and it is easy and the kids love it.
Other favorites include: take the melted chips/candy and put it on your Christmas cookies
Butterscotch chips and crushed butterscotch candies if you're a butterscotch lover.
Also used Milk Chocolate with crushed Toffee if you like Heath bars.
Experiment...easy and fun!
