Ingredients

  • 1 (8-ounce) package shredded sharp Cheddar
  • 1 (8-ounce) package shredded white Cheddar
  • 1 (4-ounce) jar pimientos, with juice
  • 1/2 cup mayonnaise
  • Salt and pepper

Directions

Mix the shredded cheeses together with the pimientos. Stir in the mayonnaise. With a metal spoon (pimientos will stain plastic or wood), stir until the mixture is well blended. Add salt and pepper to taste and stir again. Keep covered in the fridge until ready to use.

Serve with corn chips or bread.

    My family loves pimento cheese spread but my recipe is a little different. I use the shredded sharp and mild cheddar... (1pkg.each) and the diced pimentos BUT I use my Grandma White's homemade dressing recipe instead of the jarred mayo from the store. Below is the recipe... 1-2-3 Dressing( I usually double the recipe 2-4-6 as I said my family loves pimento cheese) 1egg 2 TBLS vinegar 3 Tbls granulated sugar Beat all ingredients together with whisk . Cook in a double boiler( I usually do it in a sauce pan though) stir continually until mixture looks like a custard. Let cool pour over cheese and pimento stirring until mixture is blended .More of a spread instead of a dip.Read more

    This is a wonderful recipe for Pimeinto cheese..we loved it, and will make again..One of our favarite for sandwiches. And... for Chris from Owingsmills, MD,who stated that the recipe called for 8oz of both cheeses..Ir only calls for 6oz of each..reason for the bowl full of cheese with not enough liquid..I always, if it is not creamy enough, I add a bit more mayo..Read more

    I tried this dip for the first time about a year ago, my mother made it for a family gathering and everyone absolutly loved... it. When I make the recipe I don't use white cheddar because of the cost so I substitute it with any bag of shredded cheese. My favorite thing to eat the cheese with is large frito scoops, it is absolutly delicious. Thanks Paula!Read more

    The recipe says to use 8 ounces each sharp cheddar and white sharp cheddar. It also says to use 4 ounces diced pimientos and... 1/2 cup mayonnaise. With that said, I bought an 8 ounce block each yellow and white cheddar and a 4 ounce jar diced pimientos. I used my food processor to shred the cheeses, and I proceeded to mix the ingredients. What I wound up with was a very "hard to mix" bowl of basically shredded cheese that, in mixing, managed to "smash" the cheese back together. I can barely taste anything but the cheese. I feel like I have this big bowl of just cheese. So I watched the video of Ms. Deen making the recipe again, and I noticed that it looks like she has at least TWICE the pimientos. When she's done (barely) mixing the ingredients, she has a loose and creamy mixture. Nothing like what I came up with at all. Considering the ingredients cost me at least ten dollars, I will get another 4 ounce jar of pimientos and mix them with some more mayonnaise and see if I have something that remotely resembles what hers looks like. I wish these people would consider what they put us through when they put these recipes together!!Read more
