Ingredients

  • 1 (8-ounce) package shredded sharp Cheddar
  • 1 (8-ounce) package shredded extra-sharp Cheddar
  • 1 (4-ounce) jar pimientos, with juice
  • 1/4 cup mayonnaise
  • Salt and pepper

Directions

Mix the shredded cheeses together with the pimientos and their juice. Stir in the mayonnaise until well blended. Add salt and pepper, to taste, and stir. Keep covered in the refrigerator until ready to use. It is easier to spread if left on the counter for 30 minutes before serving. Great on bread, celery sticks, or crackers.

    This is almost the same recipie I have made for over 30 years. Dukes is my mayonaise of choice. The texture can be easily... altered by how long you process it in the food processor or how much mayonaise you add. A few of my favorite ways with this recipe include putting a spoon or two in hot grits, adding to cornmeal mix with jalapenos for hot cheese corn muffins, on crackers or "party" bread, as a dip for vegetables, and on sandwiches.Read more

    I have been making a lot of Paula's recipes of late. This one was not so good. It just tasted like cheese with pimientos. ... The spread I am used to is creamy. I added cream cheese and a little bit of sugar. Now it is good.Read more

    As a native Californian, I'm not that familiar with pimentos, since I think that's more of a 'Southern' thing - but I fell in... LOVE with this dip! I had it at a friend's house last night and I could have eaten the whole bowl by myself (fortunately, there were others around so I had to use my "company" manners!).
