OMG!! I will never buy store bought again!! This was the first time I made homemade or even tasted homemade Pimento cheese. This was ha HUGE hit with everyone in the house, evet the ones in the house who claim they don't like pimento cheese.

I can't find pimento cheese spread, here, in Northern Arizona. We had it in the fridge all the time from the deli in Virginia. This spread is so delicious, a little goes a long way. Shred your own cheese and you'll get more flavor for less dollars.

I made little tea sandwhiches for a party with these and it was so good. I ate the leftovers with crackers. Delicious!

i make the same pimento cheese exept i mince a small amount of onion toast a muffin and spread with cheese and microwave until cheese is melted . it'great watch out for pizza mouth.o i forgot i add a tablespoon or two of miracle whip ,just enough to make it spreadable

This is almost the same recipie I have made for over 30 years. Dukes is my mayonaise of choice. The texture can be easily altered by how long you process it in the food processor or how much mayonaise you add. A few of my favorite ways with this recipe include putting a spoon or two in hot grits, adding to cornmeal mix with jalapenos for hot cheese corn muffins, on crackers or "party" bread, as a dip for vegetables, and on sandwiches.
