Ingredients
  • Ice cubes
  • 1/2 cup rum
  • 1/2 cup coconut cream
  • 1/4 cup coconut milk
  • 1/4 cup pineapple chunks
  • Sliced pineapple, for garnish, optional
  • Maraschino cherry, for garnish, optional
Directions

Fill blender halfway with ice cubes. Add rum, coconut cream, coconut milk and pineapple chunks. Puree.

Serve, garnished with a slice of pineapple and maraschino cherry, if desired.

Use *pineapple juice* to sweeten the drink - not sugar. The recipe should really specify juice, because a lot of you don't find it sweet enough. I like to throw a few chunks into the blender as well, but, pineapple juice is very sweet. If you have some heavy cream pour a small swig in; if you have Angostura bitters, add a few dashes. I used this original recipe from Paula, but the experimenter in me ran wild with it. I used more rum of course (the original recipe is weak and I enjoy drinks on the stronger side, but I also added half a banana for thickness and flavor, maybe half a cup of each Pineapple Coconut Hagen daz ice cream and Blue Bell Homeade Vanilla ice cream. The ice cream adds thickness and extra flavor. To top off typically I would garnish with a pineapple slice like mentioned in the original recipe, but my girlfriend likes whipped cream and a cherry on top. This was our first ever Pina Colada. We love coconut and pineapple so we thought we'd give it a try. We had them in glasses that held about 1&1/4 c. It barely made 3. Not strong, pineapplie, or coconutty so we dumped back into the blender and added more ice, rum, coconut cream and pineapple chunks. It was ok. Looking forward to trying one at P.F. I was craving pina coladas ever since I returned from a trip to Vegas and this hit the spot! I thought it didn't have enough of a pineapple taste so I added a bit of juice from the pineapple and yum! My friend makes these all the time and they are the BEST!! I'd rather drink these than go buy one at any bar. The coconut milk and cream of coconut make it so creamy and the pineapple gives it the right balance of flavor. I have made this pina colada recipe for guests many times and they love it!!! My husband is addicted to these pina colodas. I just made it for him on Sunday and he was a happy camper! This was the best pina colada I have ever had! I didn't think that this was too strong and actually added more rum ( I used a cheap brand since there was already coconut milk and coconut cream in it so not worth the price of Malibu). Just a great, easy recipe. Some of the other reviews said the alcohol was too strong, but I think that depends on which rum you are using. I use Parrot Bay Coconut Rum, and you can't even taste it. On the second batch, I went to 3/4 C Rum and left everything else the same, and it kicked it up a little bit. But the taste was just phenomenal. This is THE drink I'll be making from now on when I entertain...and the recipe lends itself well to doubling for larger groups. item not reviewed by moderator and published
I am no pina colada making expert, in fact this was the first one I have ever made, however, I thought the rum taste was a bit strong. I added another cup of ice to tone it down and 2 tablespoons of sugar. Next time I will use less rum. Overall, this was fun to make and with a little give-n-take=delicious! I changed a few ingredients and it came out out of this world pina colada!! instead of pineapple chunks, I added 1/4 cup of Dole pineapple juice..instead of coconut milk, I added 1/4 cup of evaporated milk and I added the rum last to taste (I ended up using less than 1/4 cup of rum.) then you garnish with pineapple and cherries. I read all the reviews before I tried this, so I tried it with confidence. However, I found it to be a bit strong and not very sweet. I added some sugar and it was much better. It's a good base for a pina colada, but next time, I would use less rum (and add sugar). I just came back from Las Vegas and the pina coladas there were not nearly as strong as in this recipe.
