You can create up to five timers

Ingredients

  • 1 cup sugar
  • 6 tablespoons all-purpose flour
  • 2 cups grated sharp cheddar
  • 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
  • 1 cup cracker crumbs (recommended: Ritz)
  • 8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Directions

Preheat the oven to 350 degrees F.

Grease a medium-size casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

    I've had this recipe for about 15 yrs.It's always been a hit at any gathering.I have changed it up a little every once in awhile by adding chunky applesauce or sweet potatoes to the pineapple.Both are good.This is an old Southern recipe..In fact,the co-worker that gave it to me couldn't remember where she got it from but who would have thought pineapple and cheese would go so well together!!!

    Ol' Pauler hit a homer with this one. Next time I make it, I'm going to try half white sugar and half brown, or all brown. Goes together easily, goes down even more easily.

    Made this as a side dish for a ham dinner for 40 people. It was gone before anything else. Everyone was hesitant to try it, but once they did, they finished it off having seconds and thirds. I did use a block of cheese rather than pregrated, as per other reviewers suggestions. It turned out delicious. Wonderful textures and flavors. Not too sweet, Just perfect. Will definitely make again. It was excellent hot, and warm, and cold! Really really great retro southern recipe!
