    I made this last night and agree with other critics, this would make a great Easter, Mother's Day or Brunch item especially served with Ham - but enjoy it any time of the year. I used unsweetened pineapple and didn't find that the sugar called for made it overly sweet. The cheese and cracker topping was surprisingly very good and different. I'm amazed this received any bad reviews at all. Will make this again soon. Great to double the recipe for the Holidays.

    At the end of summer, I attended a potluck brunch at a campground. Mostly, the typical breakfast items were served, eggs, potatoes and a wide variety of meat. Since the fresh fruit offered in the grocery store wasn't very good, I thought this casserole would be a great way to work fruit into the meal. The sweetness of the pineapple and salt from the cheese complimented the traditional breakfast items. The recipe has been given to many of the folks who attended.

    I only made a half a recipe and I had to use mild not sharp cheddar cheese but this was a very good side dish and I will make it again. I served it with cottage ham and normally I make escalloped apples. DH prefers the apples but likes the pineapple so it's going in my recipe file. Thanks, Paula.

    My family and I loved this Pineapple Casserole. It was easy to make, and very delicious served warm. We had it as a snack and with my husband and son, it didn't last long! Thanks again, Paula. You are the Best!

    I just tried this recipe today and it was a sooooo good. Everyone loved it. This will be made many times for many occassions. Paula, as usual, does it again. Her recipes are THE BEST.
