    My mom used to put a pineapple ring on lettuce, sprinkle it with cheddar cheese, and put a dollop of mayo in the middle. She called it Pineapple cheese salad.
    I loved that then, but this is even better!

    I bought good cheddar and grated it myself, but it still did not melt....not sure why :( It was still good, just took out the globs of cheese where it didn't melt....not sure what a "good" brand is since I used Kraft and thought that was good....any other suggestions on the cheese??

    I used pre shredded cheese and it didn't melt. After I did it, I thought about it! I might try it again, but, I doubt it! I didn't see the Wow factor in this at all!

    Loved this recipe. I made it for Easter dinner and everyone loved it. I had no problems with it being to juicy. The only thing I did different was I cut the sugar to 3/4 cup instead of a whole cup and I used one can of pineapple chunks and one can crushed pineapple. It was a big hit!!!!!!!!!

    This is great as a side dish or dessert with ice cream. Some people have complained that the cheese doesn't melt. It's because you use cheddar that is already shredded. This cheese does not melt well. Use block cheddar and grate it yourself. It's a little more work, but well worth the time.

    Pre shredded cheese has something sprayed on it, to keep it from sticking together in the package, therefore it does not melt very well. Use pre shredded for sprinkling on salads, etc.

    This is excellent and we make it at every Easter dinner. I am wondering if the folks who said it was too juicy followed the directions to reserve only 6 tablespoons of the pineapple juice to add back. Maybe they added ALL the drained juice. I never have a problem with it being too juicy.

    We have made this casserole for years. We use drained crushed pineapples instead of chunks and don't use the reserved jusice. My family loves it with ham. My 17 year old daughter is our pineapple casserole cook she has been making it for several years. We eat it with our meal and if any left over we eat later as a sweet treat.

    My family loves Paula's pineapple casserole. I do decrease the sugar to two-thirds cup, and instead of mixing the topping of Ritz crushed crackers and butter, I sprinkle the Ritz crackers on top and just drizzle melted butter (about one-fourth cup over the crackers. This prevents a soggy topping and the casserole comes out golden.
