Ingredients
- 2 cups self-rising flour
- 3/4 cup sugar
- 1 cup canned crushed pineapple with juice
- 2 eggs
- 2 tablespoons vegetable oil
- 3/4 cup grated sharp cheddar cheese
- 1/2 cup chopped walnuts
- 1/2 teaspoon pineapple extract
Directions
Preheat oven to 350 degrees F.
Using a large mixing bowl, sift the flour and sugar and mix together. In a separate bowl, mix the pineapple, eggs, oil, and add to the flour mixture, mix well. Fold in the cheese, nuts, and pineapple extract. Pour mixture into a greased 9 by 3-inch loaf pan. Bake for 1 hour. Cool and turn out bread from pan. Allow to cool completely before slicing.

I have been looking for different ingredients to put in a basic banana bread. Pineapple cheese sounds interesting....It was so easy to make. I made a few changes: I used all purpose flour but had to put in 1/2 tsp baking powder & 1/2 tsp salt; 4 tbsp oil; 2 mashed bananas; 1 cup of grated sharp cheddar cheese. The bread was very moist. However, the pineapple flavor didn't really come out maybe it's because I used vanilla extract instead. The cheese flavor wasn't strong enough either. Next time I would try using extra sharp & get pineapple extract. But overall the bread was tasty

One poster said this is a great recipe to play with and they were right. To the people who found it a little dry, try adding a small, ripe, mashed banana. Banana goes well with the pineapple flavor. I also added some chopped maraschino cherries and from another posters suggestion, added chopped macadamia nuts and a small amount of sweet coconut. I also added one more tablespoon of oil, only used Coconut Oil instead of vegetable oil. It is a healthy oil and is like heaven in a jar. The bread tasted like I was in the Islands on vacation.

I made this last night and I really wanted to like it. I didn't have pineapple extract, but I didnt believe it would make that much difference. Maybe I was wrong because it came out very blah tasting and heavy. I won't make this again.
