These taste just as good as the cake and take half the time to make! our whole family loved them.

These little "cakes" were so easy and tasty, the whole family loved them. They were even wonderful as leftovers the next day.

When these first came out of the oven I thought they weren't bad but as they cooled, I really didn't like the biscuit taste or texture. Pineapple upside down cake is one of my favorites but this didn't do it for me. I ended up tossing them. No one was crazy about them. Sorry.

My husband is diabetic so I made these with pineapple packed with Splenda and the brown sugar mixed with Splenda and reduced the amount of sugar by half. They were wonderful and he was so excited to be able to enjoy a real treat.

I came across this recipe while searching for somthing to do with Pineapples. This was so easy to make....just make sure to grease muffin cups well. These are very yummy. I took them to work-made 2 batches & they were gone in a few minutes. Talk about a hit!
